You did not lack potatoe fields, you lacked food harvesting and transformation because in the hunger period there were potatoes and carrots ready for harvest, plus wheat waiting to be made into flour.

Why I brought up that the grist mills should be where the bakeries are more than once. plenty of power with battery back up.
