Create deliciously crisp and flavorful snack with Onion-Parsley Crackers! Perfect for on-the-go munchies or as an appetizer at your next party.
Onion-Parsley Crackers in the Dehydrator
Makes 2 sheets crackers
2 medium ripe tomatoes
1 bunch fresh parsley stems
1 cup fresh parsley leaves
2 medium onions, quartered
1/2 cup fresh ground flaxseeds
1 1/2 tablespoons turmeric
1 1/2 tablespoons smoked paprika
1/2 teaspoon sea salt (optional)
1/4 teaspoon ground black pepper
1/8 teaspoon ground cayenne pepper
Finely dice tomatoes and parsley leaves in food processer.
Wet chop onions and parsely stems in drink blender. (See video) Drain off water.
In a large bowl, mix drained onions and parsley with tomatoes and parsley leaves. Mix in remaining ingredients until well incorporated. Divide “batter” in half and spread evenly and thinly (1/8-inch) across dehydrator sheets. Lightly score batter.
Set dryer temperature to 135ºF; dry for 3 hours. Flip cracker sheets and remove sheet; leaving crackers to dry on tray. Return to dryer; dry another 3 to 4 hours. Crackers should be crisp and dry in center.
Break crackers into servings. Store in air-tight container and keep in cool dry place. Best eaten within a week.

I made these and I also made the Nacho Crackers and the Italian Crackers! So far the Nacho's are my favorite, but they are all delicious!

looks great,I've watched a few people we chop for crackers,then they drain but was thinking all that flavored liquid would go towards soup stock

Oh man I so want to get a good quality dehydrator and high speed blender! I'm eyeing an Excalibur dehydrator and vitamix.

Go for it! I've not regretted buying either one of them. I admit that I don't use the dehydrator as often, but I'm always glad to have it ready for me. The Vitamix is used daily and by the whole family.

Jill McKeever oh I'm so planning on it! I keep hearing terrible things about the cheap dehydrators and only good things about the Excalibur and carabelas brands. Personally, I like the shelves and body of the Excalibur brand one, better. Getting a vitamix for sure. It's just a matter of saving up for it.

The tomatoes-onion batter is too wet for the oven and must be dehydrated to get their crispy texture.

I always think the purpose of a dehydrator is to not let the temperature go over 115 so it’s still technically “raw.” If it’s dried at a higher temperature than that I always wonder if I should just as well use my oven at a low temperature. Would they turn out differently?

If you are not raw use oven at about 200 door cracked or higher temp on a dehydrator. I bought a plastic cheapo u just plug in with no temperature control years ago, they still sell them, so my oven isn't operating for a day or 2.

What is your serving size per day and nutritional value?

This recipe is comprised of two tomatoes and two onions. My serving size is the whole batch. There's no way I can gain weight eating two tomatoes and two onions in a day, or every day for that matter. Nutritional value? I don't know. It's dehydrated food. Probably not much. I wouldn't count on this recipe to fill my nutrition quota. These crackers are a bit of joy on the side of eating the same old same old. Nothing more.

Just got my dehydrator.....being that the temperature for drying is below 160 Fahrenheit, do you ever have concern that ecoli or other bacteria may survive in the fresh vegetables?

I am a bacteria concious cook and I don't worry. I do wash fruits and vegetables, out of common sense food prep habits. As for bacteria growth, I do not worry about during dehydrating anymore than I do when eating a salad.

I stored mine in an air tight container and I opened it up a few hours later and they were chewy. No longer crispy! What did I do wrong???

Judith Loue , it's the very same principle. Using a low heat to evaporate the moisture from any food you are dehydrating. If you have a convection oven the fan will speed up the process. It's key to keep the door cracked a little to allow the water vapor to escape. Amount of Time will be different depending on the humidity of your home and the water content of the food and the temp of your oven. I hope that is helpful.

Great recipe - now here is the controversial part of this recipe. Tomatoes are high in histamine and it aggravates arthritis, fibromyalgia and any joint inflammation in the bones. Can you make this recipe without the tomatoes?
