India is changing at a tremendous rate. But, these soul foods remain unchanged. Polite interview is wonderful. Recently I have been able to watch videos of Asian and African cuisines on video. Thanks to this, in thousands of years I have learned that Indian cuisine has influenced Asia and Africa.I am grateful.

I lived in Jodhpur for 6 years in my adolsence, I did my Matric from there. I love Jodhpur and every thing about it though it has changed a lot. I could only recognise the ghanta ghar area.

I love the flavours of Rajasthan. Proud to be Rajasthani . The water of kanji wada, i.e. the kanji is kept for fermentation for few hours and then the wada is added. Kanji also helps in digestion process.

So many people here are complaining about sharing the food from same plate..but I feel it's ok to share food as it avoids wastage and if he has no problem with that then why anyone else has.. this man is quite humble and I like the way he offers the food from his plate to his companion..😄🙂

Being from Jodhpur, I must admire to produce the most comprehensive food video ......I hope the next video will cover all the missing delicacies..... BTW Gulab jamun is not fried chhena , Gulab jamuns are made of (mava or khoya + all purpose flour+ dry fruits(optional)+ cardamom powder and saffron) , Ratio of maida to mava determines quality of the delicacy. Some best gulab jamuns dough maintains 125 gms maida to 1 kg mava....So One can say its an artistry to make perfect gulab jamuns .....

Hi, Sorry for replying late ....I would recommend you 3 places which you should visit .... 1. Deshnoke, Village 35 kms far from Bikaner towards Jodhpur. Its a bit hard to access that vendor as he is not that famous.But he is the one who is best at his job(In my views indeed). He makes Gulabjamuns on order,So one need to notify him a day before.What makes his Gulabjamuns best : Quality of Mava, The ratio of maida to mava, the cavity in the center of Gulabjamun which is filled which perfectly balanced saffron, cardamom based sugar syrup. 2. Barkachha , Village Near Mirzapur, U.P.. If you like your Gulabjamuns to be served hot. This is one of the best places. where you can find the classic dessert.I have visited this place few years ago. I am not sure about the current situations . But I hope it would be there because it was fairly famous at that time. 3.Chaturbhuj,,Jodhpur , If you are in the town , And craving for Gulabjamun, Chaturbhuj is the best place to satisfy your sweet instincts.If you compare Chaturbhuj's Gulabjamun with the no.1 and no.2 you will find it bit harder.The best thing about this place is quality and the balance of sweetness(less sugar syrupy comparatively).

Your presentation style is unique and I watch most of them, sometimes you have people guide who accompany you who are very well aware about food and culture. Here there was not much talk about history of the food. Kabili is home to Afghanistan. In Afghanistan, where I worked for close to 7 years, Kabili Pulao (not Kabili) is a delicacy and is combined with either Goshband (sheep) or beef. Chicken is also used but sparingly. The guy who accompanied you did not tell you that Rajasthani food is usually desert food (where there is limited time for vegetables) and kings and soldiers were always on the move. So most food that were made could be stored for a longtime once cooked. So you will find, Dal, Bati and Churma (with over use of oil or ghee to preserve the food. You find Ker and Sangria, dried vegetables like pumpkins and of course due to lack of water, most utensils will be cleaned with super fine sand that her warm / hot since limited availability of water. Every food has a history, culture and weather linked to it.

Mr Sapru, I'm big fan of your channel and watched almost every episodes and also its helped me a lot whenever I've visited a new city. Only one suggestion from my side, since you're watched by millions of people in this case you must take care of hygiene in terms of tasting any food. e.g. Kachori & Malpua (from Narayan's Shop) is served in the newspaper which is very harmful for the health. Please do take care next time and keep with you some paper bowls/plates if it is not with the shopkeepers. Its look ugly and very unhealthy. Thanks

Your street food videos are exceptionally good......the photography, closeups, explanation and taste response makes one really want to engage in it. I have been to India many times and most times I have stayed away from street food because of possible stomache upset.
