risotto isnt "hard" if your standards are low, but it can be elevated if you're doing everything correct step by step, something even gordon doesnt do at times because he isnt used to cook italian dishes the authentic way (e.g. carbonara). knowledge is what matters, and joe made a decent risotto.

And now the New York Attorney General is looking into both of them. Not sure if Joe Bastianich is actually involved or not they could be looking into simply because they were business partners but either way Batali is in more trouble then what he already was.

For all the non-Italian fellas down here: in an episode from season 8 of MC Italy, Joe argued with another judge about the correct way to plate a risotto; the other chef was reminding the contestants to plate it in a flat plate, but Joe went "wait, who said that? In New York we serve it in a soup plate!" I am actually confused to see him plate it correctly and even explaining why it's done this way (to stop the cooking process, so the rice doesn't get overcooked from its own heat)!

@@disdonc6012 sure, but the grains underneath will still be more cooked than the ones on top if you plate it in a soup plate. If the risotto is cooked perfectly when you plate it, you want to make sure all of it stays the same until the client gets to eat it, which is why the flat plate is generally chosen, so the heat is distributed evenly. I'm neither a chef nor a physicist, though, so maybe it's not that much of a problem to choose either way of plating it, but still, the discussion between the judges in MC Italy 8 was about this! 😅

The way how Joe instructs the kids actually is good; He gives them enough pressure to work towards making the best risotto they can try out. As much as he is harsh, he's a terribly okay instructor.
