risotto isnt "hard" if your standards are low, but it can be elevated if you're doing everything correct step by step, something even gordon doesnt do at times because he isnt used to cook italian dishes the authentic way (e.g. carbonara). knowledge is what matters, and joe made a decent risotto.

@@nope9885 idk about that. I just know he owned a bunch of restaurants with Mario Batali and after Batali's sexual harassment charges came to light Bastianich had to buy him out. And now the New York Attorney General is looking into both of them. Not sure if Joe Bastianich is actually involved or not they could be looking into simply because they were business partners but either way Batali is in more trouble then what he already was.

For all the non-Italian fellas down here: in an episode from season 8 of MC Italy, Joe argued with another judge about the correct way to plate a risotto; the other chef was reminding the contestants to plate it in a flat plate, but Joe went "wait, who said that? In New York we serve it in a soup plate!" I am actually confused to see him plate it correctly and even explaining why it's done this way (to stop the cooking process, so the rice doesn't get overcooked from its own heat)!

@@disdonc6012 sure, but the grains underneath will still be more cooked than the ones on top if you plate it in a soup plate. If the risotto is cooked perfectly when you plate it, you want to make sure all of it stays the same until the client gets to eat it, which is why the flat plate is generally chosen, so the heat is distributed evenly. I'm neither a chef nor a physicist, though, so maybe it's not that much of a problem to choose either way of plating it, but still, the discussion between the judges in MC Italy 8 was about this! 😅

The reason lies in the so-called "strict etiquette". The dish must show the competence of the Chef: a risotto in a workmanlike manner has enough compactness not to spread around the plate. In the bottom, in fact, should be served only soups or pasta in broth, both mainly liquid.

I know plenty of no Michelin stars that have amazing food. Michelin stars are just code for corporate sellout I have no doubt some Michelin restaurants put out great food. I do know that they ignore large swathes of the US, mainly focusing on NY Chicago and CA, all very expensive places to live attracting big spenders and tourism.

He literally failed making them. Gordon’s specialty is only french cuisine. Not fucking Italian cuisine. Keep in mind, there is chef alian who holds the most Michelin stars and is ranked as world’s number 1 chef. There is also Marco Pierre white aka Gordon’s mentor.

What Joe had was a "mise en place". I'd say 95% of chefs have that. They prep their ingredients, put it in containers and uses it when necessary

The way how Joe instructs the kids actually is good; He gives them enough pressure to work towards making the best risotto they can try out. As much as he is harsh, he's a terribly okay instructor.
