Joe had a wonderful birthday celebrating with good friends and family.
He was blessed to have his good friend. Gary, replace rotted fence posts around our paddock, had dinner with Gary and his wife, Donna, and had a birthday lunch with 2 of his sons and their families. The School Cafeteria Spaghetti was delicious and most everyone went back for seconds. The Mayonnaise Cake was super moist and Joe had 3 pieces before the day was over! Thanks for watching and Keep Walking In The Light in this very dark world.
CAFATERIA SPAGHETTI
1.5 lbs lean hamburger
2 x 28 oz. cans Crushed Tomatoes
3 T. Dehydrated Onions
1/2 tsp. Oregano
1 tsp. Garlic Powder
1 tsp. Black Pepper
1 1/2 T. Chicken Flavored Better Than Bouillon
2 tsp. Sugar
1 tsp. Worcestershire Sauce
2 packs McCormick Spaghetti Seasoning
6 - 8 oz. Mozzarella Cheese Slices
16 oz. Spaghetti noodles, cooked
In a large pot, brown hamburger and drain grease.
Add all ingredients except for cheese and noodles.
Turn heat to low and let simmer for 45 minutes.
Add cheese, 10 slices, stirring until melted.
Add cooked noodles and stir until combined.
Pour spaghetti in a large baking pan and cover with foil.
Bake 225F for 1 hour.

MAYONNAISE CAKE
1 cup mayonnaise
1 cup sugar
2 T. grape jelly
Mix together and add:
2 cup all purpose flour
4 T. cocoa
2 tsp. baking soda
1 cup water
1 T. vanilla
Mix all together until well blended. Pour into 2 x 9" greased round cake pans and bake at 350F for 30 minutes.
ICING:
3/4 stick butter, melted
2 2/3 cup confectioners sugar
1 dash salt
5 T. cocoa
2 tsp. vanilla
5 or 6 T. milk
Mix all together until creamy and ice the cake.

On a sunny day in June
He made the family swoon
When everyone came to see
That baby of Malcolm and Gradalee.
He kicked, screamed & cooed
But his mother wasn't fooled
She knew that baby boy
Would bring her so much joy.
She taught him many things
And every day he'd sing
He loved his mountain home
And over the hills he'd roam.
Took his fishin' pole to school
A race track he would rule.
Gradalee wasn't thrilled
When he traded for Ole' Bill.
He'd laugh, tease and play
As he charted life's way.
The army called his number,
He kept night fires without slumber.
As the clock of life kept ticking by
He fathered 3 sons, the apples of his eye.
He married Joanna Lea one day
And made their home in Gray.
Two grandsons now in the family tree,
And he is as happy as he can be.
Today he's a ripe ole 74,
But one things for sure, he's not a bore.
Loves his family and friends
The hearts of all he wins.
His cornbread everyone wants
LaCareta is his favorite jaunt.
So Happy Birthday to my Joe,
I love your sweet heart of gold.
