Hi Max. You always start with a singsong rhythm in your voice. It makes me wonder if you can sing, or rap at least. I have a sweet tooth so my favorite food from this vlog, hands down, is the jenang. Heavens to Betsy, just watching its gooeyness, almost alive with resistance from being scooped from the tub made me drool! No doubt you enjoyed the food in Bu Warno. You should have seen how your eyes lit up while describing how the chillies are smashed to make fresh sambal, followed by a childlike amusement while you watched the meat drippings sauce cling to the spoon like it was a long-lost relative. I think it's caled petis. And it's so fascinating that they have a cast iron balance scale with tiny weights. Precious.You don't get to see many of those anymore.The coconut husks burn quite quickly while releasing thick smoke. (I remember roasting cashew nuts on those when I was a kid, my eyes would tear up from the smoke, I would smell like it too, but it was all worth the trouble) ;) Surely it did an excellent job infusing.all that smoky aroma into the catfish, so good it made everything else on your plate runners up? :) I have a high tolerance (and love) for all foods piquant but nowhere near your level ... yours is astronomical! That sounds about right, you are a gastronomer after all. Haha. Naturally the highlight of the day was the tongue-scorching bakso; fire in your mouth interrupted by bites of crackers. It's a firecracker! You revealed your funny bone in this vlog once again, you were a hoot! Another doozie job, Max!

That is a really cool story from your childhood! Yes, the smoked catfish was the best because they would smoke it and then go and put in a broth to cook for a few hours! Apparently they make 70kg of fish a day! haha I was in Manado and I loved that place, the amount of chilis was unreal!

CrowsZero I tried the same spicy curry challenge Mike did in NY(Brick Lane Curry House) And didn’t stand a chance. I eat very spicy food on a daily basis and couldn’t handle it, while Mikey finished the whole bowl. I have to disagree with you. I can handle spice on a Thai/Indonesian/Indian level(authentic level, not western level), but that curry was my cryptonite. After doing the challenge, my perception of Mikey totally changed. I was once like you, then I ate the curry. Now I’m a believer.
