There's a water-mark in the top left of the screen that says "Hospitality Media". This would maybe suggest that this is for the benefit of people in the hospitality industry? Chefs can benefit from instructional videos too... Especially young ones.

I have been a huge fan of John Campbells cooking when he was in Vineyard. I found him original and interesting chef. Beside of that he is a really nice guy. Seeing this was very boring. He is very keen and seems to be on a mission. But at the same time he is doing copycat thing of noma. Sorry.

I can't believe the number of items on this plate! Is he suggesting that home cooks attempt this recipe!? Even a professional cook like myself would find this to be a logistical nightmare in the kitchen! Calm down, dude!

you can make huge batches at one time, so it isn't that hard in a professional environment. As for home cooking, i'm pretty sure he's just trying to make himself look clever here.
