Another success for me today ! Tried this today for some practice to see how it turned out , perfect 1st time , couldn’t wait to cut a crusty end off and smother it with butter .. delicious 😋 I have to make this loaf for the mother-in-law who’s coming over at Xmas , she used to buy this type of loaf every Saturday at a local bakers, the wife asked if I’d give it a go to surprise her so some practice was required, she’ll be chuffed with this and some eggs from our chooks. All home grown 👍 Thanks for another great recipe and method

Hi John, I made three of these cottage loaves today. Your recipes are great and easy to follow and the bread turned out very good indeed. As a kid my Dad would send me up to the local bakers to get a cottage loaf, I would have the top piece and he would have the bottom and we would eat our huge sandwiches together. Very, very pleased with the way they turned out, the helpful tips like dusting with flour and spraying water (as well as tin of hot water in the bottom of the oven), were very useful. Thanks so much for this, you’re a diamond! Now then, I must make a couple more pork pies again from another recipe of yours. Great stuff John👏

Hi John, I've recently discovered, and subscribed to, your channel. Though American, my heritage is very British. I've recently become interested in British food, and must say, I'm enjoying your channel tremendously. I'm a classically trained French pastry chef, though I've left the trade for financial reasons. It's all good though, as I enjoy cooking and baking at home soooo much more as a result. This is a very interesting loaf, and I plan on making it soon. I will, however, preferment a portion of the dough for mine, but as you say, that's a matter of preference. I've watched most of your videos now, and I hope you continue to make them for a long time to come! Thank you for the education you're giving me on the cuisine of my ancestors!

Good evening John, I am a great admirer of your channel. I had never made a cottage loaf until yesterday evening but my local Horticultural Society has its summer show tomorrow and in the cookery class there is a spot for a cottage loaf. I am on my third attempt using your recipe as my first two were a little lopsided so this is do or die!

Good luck my friend. Couple of rules to follow, especially No 2 and 3. 1. Stick to the recipe rigidly, the quantities and ingredients are very important and carefully worked out for successful results. 2. Use digital SCALES for all of the measurements including weighing the WATER, IN GRAMS, NOT FLUID OUNCES, don't convert to cups or measuring jugs, they are too inaccurate. try to use bottled water if possible. Tap water contains chlorine, and in certain areas it is higher than others, which will weaken or even kill the yeast. 3. Use proper bread flour with at least 12% protein, check the ingredients list on the side of the flour bag for the protein level, protein may show in grams per serving but just work it out, it needs to be 12g of protein per 100g of flour. Plain or all purpose flour has a lower protein count and is great for pastries, cakes, and biscuits, but is NOT strong enough for making bread. 4. Very important...Check your yeast is working, BEFORE you start, you can do a yeast test as shown in my sandwich bread video here kzbin.info/www/bejne/fojThJWPi55plcU

Love your videos. Your explanations of process of making bread made it seem approachable enough that I started making your no-kneed bread once a week until my wife complained that it tastes to good for her to resist it, so I've cut back to once or twice per month.
