I agree. I'm part Manado from my mom's side and part Toraja from my dad's side. Fried rice aka Nasi Goreng, is something I grew up with, and I learned how to make one when I was a teenager. The eggs, onions, and garlic are something I always need when making one. Greetings from NJ (born and raised American of course).

This is a godsend for a local Indonesian like me. Also it's pronounced "keh-chahp mah-nees" (pretty much "ketchup my knees" but if you slur the my knees together) for kecap manis which literally translates to sweet soy sauce. Good stuff. Also the oelek in sambal oelek is pronounced "oo-lek" (like the "le" in legume) I also love that whenever you make nasi goreng you always make fried shallots. Just like me and my mom, we MUST. HAVE. GOD. DAMN. FRIED. SHALLOTS. with it.

10/10 for Josh’s Nasi Goreng. He added msg and *shrimp paste* into his Nasi Goreng. And his version of sambal (specifically *sambal tomat* or tomato sambal) is quite good for me

Good job on the nasi goreng, Josh! As a Dutch Indonesian, nasi goreng is a staple in my house, especially during barbecue season. Mine never turns out the same way twice, because I scrounge around the fridge for leftovers to dress up my nasi goreng with, instead of following a recipe. Love your recipe though, and now I want some nasi goreng.

As indonesian, joshua's recipe is authentic nasi goreng (without the rendang if you're not in sumatra at least :|) it has shrimp paste, the cooking order It would be perfect if you use ulekan or pestle to make the sambal, my family usually cooked the chili first before too Anyway love to see you makes authentic foods! Especially asian!

As the Indonesian, i might say your nasi goreng is really good! The ingrediets, the looks are similliar of what actually nasi goreng is. Lotsss of shallots too. Damn that just like what my mom used to make it for me. Thankyou josh for making one of our indonesian signature cuisine, really appreciate that. I feel like Josh's was maybe a bit too dark? All the nasi goreng I've had has been pretty dry and not so saucy like Josh's is. Also my mum would usually use oyster sauce over kecap manis

@@ryangamv8 every nasi goreng seller in my place always made the nasi goreng that dark, if you cook it good enough it would be caramelize nicely, but if it cook it bad it would be really unbalance sweet that you don't wanna eat it

3:02 we spell "kecap" just like "ketchup" My preference of nasi goreng is lighter in color. I rarely use kecap manis or sweet soy sauce, instead I use regular soy sauce or kecap asin. I never put tomatoes in my sambal to make nasi goreng, just shallots and spiciest chili that I found in my kitchen. But at the end of the day, you can't go wrong with nasi goreng (unless you add too much salt lol). There are infinity recipes of nasi goreng. The simplest that I know, just make garlic paste, stir fry with leftover rice, season with salt and pepper and that's it. Speaking of leftover rice, it is actually not totally true that you should make nasi goreng with leftover rice. It depends on how much water you use to cook the rice into... rice (memasak beras menjadi nasi) or the type of rice you cook. In Indonesia, we mostly know two types of rice: beras pulen (the fluffier, lower amylose, shorter grain), and beras pera (drier, higher amylose, longer grain).

i miss my mothers fried rice, was not traditional, but she believed in using cold rice so much that she would make 5 min instant rice in the morning when making our school lunches, and toss it in the fridge so it was cold for dinner. loved and never forgotten mom, miss ya. shout out to the mothers who got us into cooking! XD

That additional shrimp paste (terasi) reminded me of my late grandma... she used to make nasi goreng by mixing leftover sambal terasi and leftover rice... add some eggs... she has 2 versions, one with kecap manis, the other one without... both have very different tastes, but both are guuuddd... even more special combined with kerupuk kampung 🤤

@@iskndrzlkrnn6522 tomato in sambal is common. For instance in sambal nasi ayam penyet. Lime on the other hand is a substitute for tamarind or asam jawa. I've tried the sambal recipe because im curious af and ngl its good 👌🏻

Try blending the garlic + shallots + candlenut (till very smooth. Add oil if needed) together to form a mixture to add to the initial stirfry to give it more of that fragrant.

hey josh, I would love to see you cook some Surinamese dishes as my grandma is from Suriname. We also have Nasi goreng (because of Javanese people who were brought to Suriname to work) and a bunch of other delicious things😁 + if you want to taste the best kecap manis, you should buy the bango brand, it is the best in my opinion. + I really like madame Jeanette chilies for my sambal so that is also something you should try. they are kinda similar to habaneros

Nice, we eat this a lot in The Netherlands. I personally marinate my chicken in garlic and ketchap manis to give the chicken so much flavour. And this may be the dutch version of this indonesian dish, but it's often served with a thick saté sauce and an egg. So goood

I'm really impressed Joshua, especially the fried shallots. Would love to taste your Nasi Goreng (and not Naasi Gooreng). My favourite nasi goreng is nasi goreng pete with telur dadar with fresh spring unions, some nice krupuk and acar timun on the side and fresh fried shallots on top.

@@haihai9022 That's with metal. Teflon is extremely durable, it can withstand even the strongest acid ever made, flouroantimonic acid. I think scraping it with steel won't do any damage.

from my experiment, it doesnt have to be a day old rice in fridge. once you done cooking the rice with minimum amount of water, cool it down spreaded thin on any wide surface plate so it can cool faster for 1 hour (blow fan if the room is hot) and itll be ready as nasi goreng ingredients

As someone with family from suriname, indonesia, china etc (a lot of places yes), this looks very much similar to the way my family would make it so great respect! looks amazing!! pssstttt it's pronounced, ketchup but with an a so ketchap, like the word chap and ket just together, and manis as in the a is pronounced when you say blah but then ma and just add is to it so ketchap manis :)

Last year i went on a 3 month doet of basically only nasi goreng. Its just so fun to make and delicious. Sometimes when the fridge would get empty id end up making a creative fried rice

i tried gordons with some chicken and it was much better, the chicken adds nice flavor and also add all 4 chillies. it will blow your mind

Eat this with crackers that is shrimp based (kerupuk udang) or onion based (kerupuk bawang) would be way way too perfect for your nasi goreng!! Love the recipe ❤️❤️

try to make the sambel by crush it instead of blend it.. sometimes the seed got blend in and it makes it bitter.. we Indonesian traditionallly use cobek to crush the chillies..

Spicy comes from the type of your chilli. And yes, Nasi goreng Pattaya is really delicious. Only most people in Asia don't use Rendang paste or even Sambal paste to make fried rice . Maybe on some places but not all, at least not in my home when I am making them

i have to say, Josh's sambal is v similar to what my dad usually make whenever i come over! the only difference is my dad's version is more greasier but that's about it! and your pronounciation of kecap manis is kinda close but that's fine! but when you say rendang, the "a" sounds like when you say ramen, so it's rendAng not REndang. hope that helps and keep up the good work Josh! much love from Indonesia

in my humble Javanese family, we use candle nut in our nasi goreng paste (consisting of chilies, shallot garlic, and shrimp paste) grinded in stone age blender called cowek. For the protein we use tempeh and a beaten egg. Voila cheap and tasty nasi goreng

two tips from someone with way less experience than you! chilis will loose a lot of heat when cooked which is why its good to add them at the end or use a lot for that good good pop of color. Also, Josh, you can use rice that was cooked same day if you lay it out on a tray and let the steam evaporate. the rice doesn't need to be cold it needs to be dry. a fan helps move this process along nicely. might save you some time if you're tryna get a video out quick.

Nasi Goreng is absolutely the best fried rice dish on earth. We travel to Bali every couple of years and eat it like twice a day the entire trip, and I usually bring back a big bag of peppers and rendang sauce for home. (and I live in Japan, #4 in fried rice dishes behind China and Taiwan)

We indonesian usually put any protein we got in the fridge to our nasi goreng and it always came out good lmao And we got this special type of rice called "beras pera" for nasi goreng, it contain lower starch and the grains is separated like basmati, if you using this type of rice then no need to wait until the next day.

I live in Bali and I can say the rendang paste was awesome and yo u call the sweet soya sauce as ketchap Manis. Its where the dutch got the original ideal of ketchup ( it was originally sambal and the misunderstood).

Indonesian house wife here. Usually sambal consist of big chilies, cabe kriting & bird eye chili. Deseeded chilies are for kids. Fine texture usually for seasoning, not sambel. Better if a little bit rough texture . My mom usually fry/ boil before blend. And you forgot terasi/belacan I think yours taste very sweet for me
