As a Taiwanese and a fried rice lover, I must say his fried rice looks reallllly good! It’s like fancy (maybe unaffordable) fried rice served in a high-end, authentic Chinese restaurant 🤤 BTW, using a drainer to wash rice is in fact a much more convenient method comparing to washing rice in a pot cuz in this way, the rice wouldn’t be scattered everywhere when drained. I’ve learned this from a Taiwanese chef youtuber and found it very useful.

Well most of them don't need to be used, could measure the tablespoons etc straight into a bowl. They're premeasured in individual bowls for the sake of videography but at home you can make his in not that many. 1 wok (reuse for onions and rice), 1 for sauce, 1 for eggs, rice cooker pot, chopping board to store all the veggies etc.

@@TheJadedView as an Asian I'm 100% trash talking Jamie Oliver after watching some of his Asian recipes. They either make me want to scream or puke and just... No. That man doesn't understand culture. But I do respect Gordon on the other hand, because he actually does respect the culture the dish he is cooking comes from. I was so glad to see the amount of respect he gave to the people who taught him how to cook real Indian food, his willingness to learn and he always strove to make it fit our taste. He didn't go all, "oh I bet I can make a British version of this" like most British chef's do. There is a dish he cooked which is very famous in my culture and I couldn't help but feel proud of the effort he, as a white man with low spice tolerance put into impressing the ladies who taught him how to cook it. That's a true chef right there.

Being a chinese chef for 4 years and started from bottom first 2 years cooking rice everyday....i can confirm that cooking rice without a rice cooker is super hard(been there done that when the rice cooker died middle of service). When the rice is fully cooked you only have few seconds to switch the fire off cause it burns quickly, or you have to control the fire at the right temperature if not the bottom will burn and the top remains raw. You just eye it but you cant open the lid ! it would fuck the rice up too! Its worse than baking a cake.

I mean, if you cook rice everyday then yeah, it's something you'll spend extra on and completely worth it. We have a zojirushi (although bigger than uncle roger's) and we use every single day. Before that, we had a small tiger rice cooker that lasted 15 years. They last a very long time.

Josh's fried rice looks amazing, but it looks like something that would be at an upscale Asian Fusion restaurant that you go to with your girlfriend's family to meet her parents for the first time and the food is delicious, but you're kind of uncomfortable. Uncle Roger's fried rice looks like the kind of fried rice that you get in a street market after you've had a night of drinking and you need some good, cheap food that tastes like a hug feels.

In Korean cuisine, putting some green onions at first with reaping hot oil is called ‘파기름‘ which means ‘green onion-flavored oil’. @Lassi Kinnunen 81 that's what making something better means? My mom and I have been "but bettering" shit since way before I started watching Joshua Weissman. We live in India and the packaged shit we get here isn't that great. So we used to make it at home... But better. And it almost always needs elements to be changed in order to be better. Its not changing the dish entirely, but the usage of different ingredients. Just like Joshua does. If you don't change certain ingredients, you're not making the dish better are you? It's the same thing rehashed at home. Just because dominoes likes to add weird ketchup instead of marinara, and icky cheese, doesn't mean we have to too. I swear the amount of times I have cursed pizza places for their shit marinara and just decided to make it home. People who like cooking at home have been doing this for ages. If you don't like the but better version make your own. No one is stopping you. Or eat the original if you're such a fan of sub par food.

Like fried chicken, add different spices to the flour and it technically saying that it's a different dish. I honestly like what Joshua is doing, it's not out of this world and personally made me go to local asian stores for cheap and delicious ingredients.

You also need to understand that fried rice is a regular dishes for Asian. It doesn't make sense to wash that much of equipment for things you do daily. Just minimise it as much as possible. Personally, I'm somewhere in between. When I make something for the first time and need to follow a recipe, I do measure everything and prepare stuff in advance, using many cups and bowls. Once I know what I'm doing, I streamline the process, measure "by eye", and season to taste - because now I know how the meal should look like and taste during cooking.
