I love the amount of detail the new guy Kevin provided. It seemed before like Josh was the only 'foodie' in the house, and discussion was always very simple 'this one tastes better, has better texture'. Hahaha I was thinking that when I see Josh making so many thing in the series! Claire always seems to have a hard time doing it and I respect her skills but he tries so hard and uses things not readily available
@salvadorHombre2 жыл бұрын
Most of the time Josh is just making something completely different though. It may look a tiny bit like the item he's recreating but it's really nothing like the real deal. Case in point : his "Oreos" which were really just weird moon pies. Calling those "but better" is weird. Claire on the other hand actually made Oreo and made it better.
@zahrasyeda15662 жыл бұрын
the reason why claire took longer was because hers was the process. she was recreating a mass produced item by hand and figuring that out how it is actually done is harder. Weissman on the other hand is making them better, ofcourse anything made of high quality ingredients and by a professional will taste better - and by saying you are improving it gives you the freedom and flexibly that claire often didnt have Edit: we dont know how long he takes to develop these recipes maybe it is as hard as gourmet makes showed it to be
@piccoleitor2 жыл бұрын
Probably he just Googles the recipe. Claire tries several iterations until she gets the most similar result. If Joshua really does that, it would be stupid not to show the process

Ground beef tostadas are very rare in México, while the cheez-it looks like a tostada I would recommend you using the most common toppings for tostadas: shredded chicken or beef, shredded or finely diced cabbage tanned with a bit of lemon and salt, slices of tomatoes, a bif of onion, cream (not what you created here), hot sauce (boiled tomatoes, chiles, garlic and blend) and avocado. Shredded chicken or beef is made by boiling chicken legs and thigs (not breasts please) in a pot with garlic, half an onion, one or two bay leaves, black peppercorns, rosemary or oregano. The point of this is to use the resulting broth to acompany the tostadas, just add carrots, maybe diced potatoes, zucchinis, chayote and green bell peppers OR california/anaheim chiles to amplify the flavour AND to also fill you. Shredded chicken or beef can also be cooked with a mixture of chiles or achiote before used in a tostada. PS Refried beans also work marvelous for tostadas. In coastal cities for our tostadas we use ceviche made from fish or basically any seafood like shrimp, clams, octopus, etc. Saludos from Baja.

For a keto version of this recipe, replace the 3/4 cup of flour with 1/4 cup each of lupin flour, vital wheat gluten and oat fiber. Bake at 325 F for 15-20 minutes, just until lightly toasted edges. Turn off the oven and remove the sheet with the crackers from oven and cool on the sheet for at least 30 minutes. Pre-heat the oven to 175 (keep-warm setting) and place the crackers back in the oven for 1 to 2 hours. This will dehydrate them and make them very crispy. The nutritional yeast is very important for the taste. Best keto crackers I've had/made.
