Well it's true I bought 2 for a party once and let them sit for just 1 hour and they get soggy. Tried to heat them up and it just got worse. I really like the onion mum but I'm sure the cook isn't the "normal" cook with COVID so not as great. My brother who never cooked a day in his life was hired as a chef at a different franchise and I'm never going back there again because of that.

@@Nathan-en9dn The problem is the packaging is sealed to keep the heat, but also keeps the moisture and with the light batter it causes it to become soggy. Best way to reheat it is to use a toaster oven, or broil in a standard oven with door open to allow circulation, still best when first made.

Roles being reversed and if finances were tight, I think I'd be considering a divorce from my spouse if they told me "I HAVE to order this book right now!", and I asked them to please wait, XD! Thankfully, that wasn't the case here and this was really sweet and heartwarming :)

Take a metal scoop and scoop out the core of the onion before making the cuts for the petals. When I worked at outback we did that to help the rammekin sit in the onion better. Also if you place it in the grease with the pedals facing down and give it a few solid taps(with the metal spider or mesh spoon hes using) on the root it opens up the pedals and releases the air pocket making it cook better. It is also fried in beef tallow.

Another tip to get a more even cook on the onion is spin it into the oil rather than just setting it in i used to work at texas roadhouse as a fry cook

@@pamelaremme38 you’re entirely correct on this one. I’ve worked at both Texas & Outback. Texas did it better. Theirs are far easier to bread and far more consistent than outback.

Fun little story: I didn't have the proper tool to safely lower my blooming onion into the oil, so I had to lower it quickly before it fell and splashed. It quickly boiled over and set my stove on fire anyway. This was also my first time trying to fry anything Bonus fact: if you eat the whole thing, EVERYTHING that leaves your body will smell like onions for days

I got your cookbook yesterday and the first thing I made was your “ultimate chocolate chip cookies” and knew that they were about to be amazing but do you have any idea what you’ve done?? I made a dozen cookies and couldn’t even have one for myself because of how fast they were snatched up! My family took theirs and stole mine and the rest went to my office coworkers. Immediately at 9 am the word spread fast about the incredible cookies in the break room and were gone by I swear 9:12 am. So bravo to you for creating that amazing recipe and for creating your cookbook. I’m so excited to learn from you!! 👏🏻🥘❤️

7:37 The Outback I worked at had a dedicated onion deep fryer, because they go through so many and don’t want cross contamination with the shell fish(coconut shrimp) so it’s probably just for onions unless the cooks are trying to close things early at the end of the night, then we might be down to one but usually it has it’s own fryer

I asked at the one near me because a family member has a serious allergy, and in Aurora IL, they do NOT use a separate fryer! At least not reliably enough the server would vouch for it

They use dif fryers just for blooms. 2 fryers, 2 blooms each. They get Nasty with all the powder. And they use lard. But they DEF didn't want an allergy liability, so they prob told you no. We'd have to share every once in awhile when it got busy.

Got my book today and I have enjoyed reading it so far! As a former Texas Roadhouse employee, I can say the blooming onion is fried in it's own fryer to avoid cross contamination and to not have other fried flavors disturbing the onion flavor. Also the onion blooms better if fried upside down with the root facing up.

Geez, everytime i see american food youtubers use onions i am surprised how freaking huge they are, it's like we live in a parallell universe where the only difference is the gigantic onion :D I have not seen an onion of even half the size in Sweden :D

We have several types of onion bred to be gigantic and low in sulphur compounds. The Walla Walla, Vidalia, and Maui Sweet are all named for the region in which they grow. They don’t ship well because of the high water content but if you can get them, they taste distinctly different from the yellow onions most of them originate from.

I find it funny there’s a machine that cuts the onions, when in fact outback itself just uses a manual, upscale version of an apple slicer. Literally lol. Also, outback grows (and if I remember correctly, has a patent for) colossal onions, specifically to be used to bloomin’s. Coming from a former employee :)

@@markteague49 I used to drain the wings then mix in the chicken spice, they are typically “marinated” overnight in correctly portioned bags. They then get tossed in the bloom powder and dropped straight into the fryer. The wings are then spun in pre made sauces. I’m sure you could find the spices in the chicken spice and bloom powder somewhere

Blooming onion is one of my favorite snacks to grab at the local festivals. Never tried the outback version, but the festival vendor ones are usually nice and crisp with a beer batter.

My cookbook arrived today. I had just got home from the hospital and it was the BEST surprise to find it waiting for me. I like to think that if I had a son, he would be like you - fabulous, irreverent and a hell on wheels in the kitchen. I’m a displaced bluebonnets in a sea of Kansas sunflowers. I miss good Texas cooking. I wish you continued success, Joshua. And congratulations on the beautiful cookbook.

Recieved the book today! I was so excited felt like Christmas morning. I was going to try a "bloomin' onion" but have decided on onion rings with your sauce instead. That has to be a LOT easier and the taste and crunch should be a lot more consistent. Thanks for the recipe.

You have to cook it 1:30 root side up then flip and cook 1 min, also when you put it in the grease tap the root a couple times so the petals open up, also don’t use egg so it doesn’t stick that much just use water buttermilk and the flour mixture which is flour, cornstarch and spices sir if you want the original version use carbonated water and flour mixture

Best onion rings I ever made was by accident, I made burgers the night before and had cut up way to much onion. Sat in the fridge over night on a plate loosely covered in plastic wrap.. they became somewhat dry and rubbery. Next day I was frying fish so I decided to just batter and fry those onions.. Best ever, the low moisture helped the batter stay on perfectly, plus the soft onion cooked perfectly!! Try it, it was a unexpected treat

One of the ways we got the onion layers to open up was to put the sliced onion with the root pointing up in ice water for a while. Shake it off or let it dry for a while before flouring and battering. The way to fry was to spin it while putting it with the root up into the oil. Much easier to do in a giant restaurant style vat fryer or at home in a turkey fryer.

This dish started at a small restaurant in New Orleans. A couple of secrets, soak the onion in cold water for a few hours to increase the bloom. Cool the onion in a freezer. I bet turning the cold water into a brine might punch things up.

If you haven't got his cookbook yet, do yourself a favour and get it. Mine was delivered today, and it's excellent. I like cooking so have quite a few cookbooks. The difference with this one is that it's filled with recipes that I'll actually cook, rather than just 1 or 2 good recipes per book as it usually is. Papa Josh done good... best cookbook by far.

I didn't work at Outback, I worked at Lonestar Steakhouse. We didn't have a "Bloomin Onion", we called ours a "Texas Rose" or some nonsense. So I'm not sure if there were differences between Outbacks and ours, but here goes - 1. We didn't use "Spicy Mayo". It was "Southwest Ranch". Basically ranch with cayenne powder in it. 2. We didn't prep or make them there. They arrived frozen and were tossed into the fryer essentially straight from the freezer (just like all the fried chicken products and french fries) 3. I don't recall ever seeing the cooks salt them when they came out of the fryer, so not sure if it was "salt in the batter" or "salted after". and 4. God, quitting that job was one of the greatest days ever... I hate generic fast-casual restaurants. Your onion looks delicious, BTW!

Nah I work at outback all the chicken and blooms are powdered as ordered we peel and cut the onions in prep then have it all ready shit sometimes my km says my shit looks too store bought when we make it all from scratch besides the bloom powder

Hey there, prior Bloom guy at Outback (yes, there is a dedicated cook for Bloomin' Onions). First thing, (as stated by a couple other people) the onion should enter and exit the oil upside down. 1 1/2 minutes face down, 1 1/2 minutes face up, flip it over again and pull it out. The bubbling oil spreads the petals, cooks the whole thing and the oil drains out quicker when you pull it out. 2nd, the battering: real amateur job, BUT THAT'S OK. Normal people don't do this thing hundreds of times in a week (not a joke). You don't have enough eggs in your batter (should be 6 eggs per gallon). You don't need any milk, we did a side-by-side and found out it doesn't make any difference compared to water (but bonus points if you add a pint of beer). The spices added sounds delicious though! Last thing is the onion cutting/prep. I love the instructions for the spacing, makes it much easier to do if you don't have the tool. Definitely cut the roots off, though; it's icky and the cut lets the onion sit flat. When you're cutting the petals, don't cut too close to the base and try to make the cut diagonally into the center. You can see the result during the flouring; you don't want stray petals falling away from the rest of the onion, but you still want the onion to 'bloom'. As a fun extra tidbit of info, Outback uses Beef Tallow in their fryers. Peanut oil is the best, but can't risk possibly killing someone. There's also a dedicated fryer for blooms so that people with shellfish allergies can eat it too. And please be safe with the oil! An onion is not worth the kitchen fire! ...... Happy cooking!

I've liked the ones at Texas Roadhouse more than the Outback version. I tend to order it with ranch rather than their normal sauce. I also tend to prefer onion petals to onion rings. It's basically the thing to have while waiting for everyone to show up...

I work at outback and we actually soak the sliced onions in water overnight to prevent them from sticking together. It takes about 5 minutes to get a bloom out so if you order to-go it has probably been sitting there for 10+ minutes waiting for you to arrive. Also it's packaged in a sealed container so the moisture ruins the crunch. It's actually the highest profit margin menu item costing only $0.75 to make and sold at $8.99
