I have made this recipe third time, yesterday. I replaced the alcohol with the apple juice and refrigerated the mincemeat after cooling. The recipe is awesome and so is the taste of the mincemeat. I always make it sans alcohol and every time it tastes great. I would be using it to bake mincemeat cake, tarts etc and share it with my friends and neighbors.

I talked about this in the Homemade Mincemeat headnote "In the beginning Mincemeat was made with meat (hence the name), along with eggs, dried fruits and spices. Over time, beef suet (kidney fat) came to replace the meat and the eggs were dropped completely from the recipe." Today's mincemeat is made with or without the beef suet.

Every year we make mincemeat cobbler for the holidays and mincemeat cookies. Decided this year to make my own with my daughter who helps with the baking. Decided to simmer it in a crockpot, doubled the recipe but instead of four apples, used two granny smith's, two pears and two quince, along with the two raisins, prunes, dates, figs and candied cherries. So far, got to say this is the best, and a great bonding experience.

#Seriously, I see no reason why anyone would feel guilty using alcohol because the moment alcohol is listed in a recipe, it becomes an ingredient and not a substance. Even when the mincemeat is sitting in the fridge, the alcohol continues to cook the fruits. Mincemeat can stay on the shelve for years with that alcohol preserving it in a nice sealed jar like she used. It's not like you are boozing, just because there's alcohol in it. A lot of restaurants cook with wine all the time; it's the flavor and ability to break down the meats of the fruits, to develop their full flavor that we are after in the entire mince meat recipe. My mom kept mince meat for over a year. It gets richer, thicker and flavorful with age. The alcohol is essential to the recipe because it acted as a preservative when there were no fridges. It is also the only ingredient that gives it that richness in color, as well as that certain distinct burst of flavor. The pilgrims brought it over to the US from England, where mince pie is enjoyed all year round at tea time. In Great Britain mince meat is a pantry essential. I wrote a lot didn't I...Well that's because I am an Author...I love writing. Thank you for all your hard work My Lady #Joyofbaking ...You got a.new subbie here.
@MSEDzirasa201510 жыл бұрын
I see what you mean. But I am sure you have mince in grocery stores year round. In the US it is a seasonal item and very inconvenient. My parents were born and raised during British colonization of the Gold Coast.. I think they practiced the old ways of having mince all the time from that era because that's what they learned from the English and taught me, but they are long dead. So yes that was a long time ago. Times have changed.

This is a nice recipe for those who do not want the beef suet in the pie. the brandy highlights the flavors. For those who cannot handle the brandy and rum, you should stay away, although the baking would reduce some of the alcohol.

Thank you for this recipe. My husband is allergic to alcohol so I do know I can use fruit juice in cooking instead, but I also prefer to cook the mincemeat down to get a nicely melded mixture and to ensure food safety due to being health compromised. And, I'm originally from England so I know about suet but have never noticed it for sale where I live, so a vegetarian version is just fine with me too. 😊 I've saved this one, and looking forward to giving it a go! 👍🇨🇦

No Brandy...no problem; apple cider vinegar and soy sauce... problem solved! Has discussed in this video the alcohol bakes off and the flavor is what remains (outside some in the rehydrated fruit). I find that soy sauce has been a wonderful emergency replacement for vanilla extract, expreso, and other forms of "dark bitters", this recipe shouldn't (and wasn't) any different. To replace the fruity notes or flavors found within the Brandy was substituted with the fruity notes in apple cider vinegar. Thought I would share this recipe hack!

Wonderful lesson in a traditional Mincemeat recipe but it’s not an Old English Mincemeat recipe. For instance here in the U.K. and Ireland we never use figs or cranberries and apart from the suet which is always used and you can now buy vegan and vegetarian versions of suet. Also all homemade mincemeat is prepared traditionally at the start of November. To start with all the dried fruits are soaked in alcohol for at least 48 hours in the fridge to enlarge the fruits to absorb all the liquid. Then when you are ready to prepare, add all the ingredients together in a very large pan over a very low flame, low enough just to melt the suet. After an hour or so transfer mincemeat into airtight containers store in the pantry or your fridge till it’s needed. Mincemeat is traditionally made for pies, flans, roulades or any other recipe you want. Mincemeat is used throughout the month of December, they generally are passed around to Carol singers with Mulled Wine or for a cup of tea late afternoon on Christmas Day or Christmas cake before the Christmas night buffet is served around 9pm.

instead of butter, I bet you could use beef fat (suet) or Lard (pig fat) instead ! I know that lard is high in saturated fat, which is good and no trans fat, which is good also! cheap, which is good too! and available in small amounts at the grocery store!
@joannelawrence49927 жыл бұрын
I use to eat this pie when I was young, but with a family of my own, no one would eat it with the Suet. The original mincemeat was made with the suet cooked down, but for those that don't like suet, you can substitute butter.
@chaophray6 жыл бұрын
Traditionally suet was used because it has a very high melting point and adds texture to the finished product. Neither lard nor butter will give the same effect - they will just make it oily, which misses the point. I always render my own suet and use it in Xmas recipes.

@joyofbaking6 жыл бұрын
In the beginning Mincemeat was made with meat (hence the name), along with eggs, dried fruits and spices. Over time, beef suet (kidney fat) came to replace the meat and the eggs were dropped completely from the recipe. Today's mincemeat is thought of as a spicy preserve consisting of a mixture of dried and candied fruits, apples, and spices (with or without beef suet) that are heavily laced with brandy and/or rum.
