I'm making a 25 lb turkey in a large roaster oven. Can you still spatchcock such a large bird? Do you have a link to how to do that? I've never tried that before. Would this recipe still work as well without spatchcocking the turkey? If so, how would you change the cooking time to still keep the turkey moist? That's my issue every year.. timing the cooking of the large turkey to coincide with the arrival of guests.. and keeping it warm to serve but not dried out. Thanks for any help! 🙏🙂
