I did a spatchcock chicken three weeks ago. I do mine a tad different. I fillet the chicken off the whole carcase so there are no bones except the thigh and leg.

Trying this later today. Have you adjusted your offset for your RTD probe at all? Mine runs around 50-100 hotter than what the set temp says.

No I never have verified temperature because I’ve been so pleased with the results there was never any need to check it. Spatchcock is the way to go …. Enjoy! Thanks for watching

Yep …. I’m beginning to miss the little guy. It hung around for a lot of cooks and was liking the notoriety of being in the videos, but now no more having to share the stage with the little guy. Thanks for watching and I’m looking forward to see how these wings turn out. Stay tuned!

Could have been crispier, but wasn’t too bad. Could have prepped the night before and left it frig uncovered to help dry skin out, but this was a spur of the moment thing.
