My Gran made this recipe, my mom made it and now, I make it. Exactly as Julia shows. It always works and you can adapt it endlessly. Watching Julia always soothes my soul. ❤

The way she’s real about everything and simple, doesn’t care about clearing her throat… she’s the g.o.a.t in the kitchen. Takes her time while getting to the point. Patience is a virtue!

It makes it so much more flakey I freeze lard in 1 cup portions so always ready

Only takes 3 hours of preparing and keeping dough in the fridge at all times ;) this is such a lovely programme! I fully understand the appeal!

It’s called thinking ahead. The actual time you have to spend is about 15 minutes.

I am so embarrassed. While growing up, my brother & I sometimes watched but always made fun of the TV show, The French Chef... her voice, her mannerisms, her food, and her production. Disturbing us was her intrigue and excitement. It was new & different and we didn't like nor accept it. When you scratch deeper into my unfulfilled, disgraceful & unhappy childhood, my mom (who is 95 and barely existing in a nursing home) made the same stupid, plain meals day in & day out, rarely trying anything new or different. And we as her children, didn't accept anything new or different... on our plate, or in our minds or lives. We made fun of her. We made fun of everything. If Mom tried something even slightly new or different, we would make fun of her attempts, of her meals, and of her. That is how we reacted throughout life. Very sad. Also, sad is that neither of us learned how to cook. Today, when I hear the word "recipe," the blood rushes from my face, and 😢I get a blank stare in my eyes as they slip into the back of their sockets. A perfect example of learned behavior. This is the first time I've seriously watched and appreciated an episode of Julia Child, and I now see how she revolutionized cooking, baking & creating recipes; something I never experienced. I now have a deep respect for her, her show & her impact. Woe is me. All I've done for my now 29-yr old son was to help him make a few basic meals. Nothing more, nothing less. Woe is me again. I lacked appreciation in my life. For a long time, I did not receive it and I couldn't give it, feel it, nor accept it. But now I can say that I appreciate Julia Child. I guess I will excitedly move on to reevaluate, The Galloping Gourmet, and see what transpires in my life. Recollections of a sad, unfulfilled, non-cooker & non-baker on 2024-11-19.

Guess what? You’ve reached a healing point from some trauma you have had. Bravo. You can see it, and perhaps mourn just a bit from that lost, then smile and go forward enjoying and appreciating more.

There was no talking allowed in the house when Julia was on the TV . The best cooks in my family learned a wealth of information that simplified their baking and methods including myself.

Love Julia. How do you get the ring off of the finally baked quiche? It doesn’t appear to be like a spring form used for cheesecake. Does it just slip off the baked quiche through the bottom when quiche is lifted? Mystérieuse ;)

When it bakes the shell shrinks a little. Remember the crust is full of butter!
