I totally agree with you David. I once told Jacques Pepin that Julia Child was my spirit animal! I actually inspired a “like” from him for that comment.😂 I’ve loved her since I was about 12 in the early 1970s. I’m really tall like she is, and I like to cook and I’m kind of a dork. Same-Same! She gives me joy and courage every time I watch her.

Quick question: This, of course, looks amazing and delish; but, it looks more the texture of a decadent rich and creamy chocolate pudding, rather than an airy, almost foamy mousse. How would you describe the texture? Also, why is the mousse she made during the program so much lighter in color than the mousse she showed in the beginning and used at the end to fill the mold? Did she use a dark chocolate for the finished mousse she used and a milk chocolate for the demonstration mousse? Have you ever made this with different chocolates? I think this would be fabulous made with a raspberry liqueur! Thank you!

make a crème anglaise, add melted chocolate and incorporate heavy cream that has been beaten to stiff peaks. Takes less time .

I won’t eat uncooked egg, not whites and not yolks. I won’t make this recipe at all. It’s too dangerous for botulism and salmonella.

Botulism doesn’t come from raw eggs, and you could always use pasteurized eggs. Assuming you’re not terrified of driving to the store.
