You can hear the door make contact with the stopper but clearly it didn't stop, also when Riggs leaves the door is set closed. So that and the fact that most of the "Iconic moments" of movies often are accidents. I wouldn't be surprised it the door swinging past the jamb was unscripted but like you said, represents the helpless frustration of Murtaugh.
