You loose sail pressure when going downwind, so will not work in these conditions.

I'm pretty sure she was just practising her starts the way she kept on turning upwind and coming back. The main part of the channel is much more of a downwind angle than the start and the first timing light is a good distance down the straight part after the bend. So you have lots of time to plane off and build up speed.

You probably know this already, but a Leatt brace isn't very effective unless you're wearing a full-face helmet.

With the windsurf helmet it prevents the most prevalent and dangerous backlash injury of the neck. It stops my head at a critical angle to the back on the windsurf helmet. Works brilliantly on the channel! 🤟
