Chilaquiles are my favorite breakfast dish. And you're right, the egg is a must.

back in the early 90's i was stationed at Ft hood, when we had to work late i lived to far to go home to eat, my Sqd leader was a Tejano, we would take me home to eat, his wife would make enchilidas like that, she'd use the large round corn tortillas dipped in the enchilada sauce stacked 3 high with cheeses in the middle. fresh cilantro lettuce and tomato on top, then top that with 2 fried eggs. that was absolutely the best meal i ever had.i still make enchilidas like that to this day, and on a side note she would make a pot of pintos with jalepenos those were also the best beans i ever ate. I miss Texas and it food :)

My mother-in-law was from Juarez. She used to make these... of course, everything from scratch including the tortillas. It was SO good! I've made it a few times although ingredients more like yours. Absolutely delicious!

The first time I had this was two years ago in Guadalajara, Mexico. In honor of Mexican Independence, the restaurant made it with three sauces; red, white, and green. It became my favorite.

A couple fellas from Jalisco, MX moved to my town in Virginia a couple decades back and brought some incredible food with them, chilaquiles included. There's nothing like a plate of these and a giant mug of horchata to wash them down.

@@Trd2020 There's a huge Mexican population here, at least within a couple hours of the coast. There are wonderful mercados and authentic family restaurants in just about every town bigger than a map dot.

Chilaquites A local family restaurant near my home serves Chilaquites with 1/2 lb Jimmy Dean ground sage sausage crumbled fine and almost crispy with three sunny side up eggs on top and cojita cheese on top of the eggs with a dusting of tajin powder. It is wonderful for breakfast 😋! I like it with cinnamon coffee. They also make it at dinner with minced beef and a Diablo sauce from ground arbol 🌶 and habinero 🌶 🌶 peppers and spices. Now that gets a mite warm for most folks, but I love the spice! They serve bucha and a few other things like lamb brain tacos. I take all my friends there and it is very good . They have a peppers and salad style bar with radishes , all kinds of fresh and roasted peppers , 7 salsas of varying heats and flavors. Prices are reasonable and very very authentic service and food . They don't serve tea or coke , they serve flavored drinks from South of the border and fresh horchata. It is a great place to eat and enjoy. The staff are fantastic and have the biggest smiles.

Summer sausage would be good in there. Yeah, homemade enchilada sauce from Chimayo brand chile power is the way to go. For dessert, probably a Royal cheesecake. It comes in a box. You would need to bring powdered milk. You can mix all the ingredients together including the graham cracker crumbs which would normally be used for the crust. Just add water/follow specific directions on the box. Stir vigorously for a minute and a half. Pour the mix into a pie tin. Sets up nicely even in warmer weather, but if the weather is cooler it's better.

I make this at home from scratch, and all the taste comes from the salsa you make . Kinda hard to describe the taste cause it’s just a fried tortilla cut in triangles with the salsa and cheese . I’ll say dish overall taste of corn , green tomatoes and you get the nice salty cheese to balance the sourness or bitterness from the tomatoes . Texture wise either crunchy like corn chips or a bit soggy like a soft tortilla

Looks really good James!! Funny... I was thinking of making some of this... I was reviewing videos to see how others made theirs and now I gotta go get the ingredients I'll add green chili to mine!! And maybe some chorizo or some other meat... haven't figured that out yet Ha! Your version is definitely a car camping meal!! I wouldn't mind trying that next time I go camping!! I visited a friend of mine recently, and we decided to cook a curry recipie she likes... The ammount of Herbs and spices (No Chilli at all) was barely enougth to flavour the chickpeas... and it was allready too much for her :x Its wild how different pallets react! I was really a shame because the curry was really good... after i tripled the spices in my portion and added a small pinch of red chilli flakes...

It looked pretty good, unfortunately, with all the onion, garlic and jalapeno there would be no way that I could eat it. I could adjust the other spices to taste. You can make your own without all this it’s not important for it to taste good . You can get some tomatoes and tomatillos , char them up on the skillet or direct fire before blending them into a salsa . You can control the amount of chiles you add and whatever else you want . After that just grab a tortilla , cut into triangles and fry it . After frying it’s all just throwing salsa corn chips and the cheese

James, I like your video, son, but the reason your enchilada sauce taste like a tomato sauce is because that's what it is. Check the ingredients on the back of the can, there's no chile in it at all, it's just tomato sauce. thought I would let you know. try lavictoria red enchilada sauce, it's made with red chile and no tomato
