We had several opportunities to cook over a campfire made from dead mesquite we gathered . I really like meat cooked with mesquite! Keep making the videos, I am learning a lot from you!

Flour tortilla tacos? Corn tortilla tacos....flour ones are burritos not folded right. LOL Like the difference between Sonoran and Chihuahuan tortillas. All depends on where you are I guess. Same for the sauces. Some have tomato sauce some are pure chile. Still this is great looking food! Thanks for sharing.

Loved it. Glad you made this video. I use to do that at Oro Grande mountains. But it was always in late fall and winter. Last time I cooked there I made green chili stew. Wow those look great! No lie, I spent two nights in Wayne National Forest and we also made tacos very much the same except no Chiles which I always love about your cooking. Ours had pork, jalapenos, habanero, lime, guacamole. Sooo good!

In the Spring of 2008, I started working for a restaurant Group that ran all the food and beverage/alcohol at Dodger Stadium in Downtown Los Angeles, Calfornia. At that time, there used to be a famous L.A. Mexican restaurant Food Vendor called Camacho's Mexican Grill, and they were famously known for the CARNE ASADA tacos, nachos, and burritos. The marinade used is what they used on their very restaurant chain, and I have to admit, it's a pretty complex and tasty one, that provides lots of acidity and that familiar Latino spice that brings a smile to your face!!! I now SHARE this Recipe with you during this long and arduous "stay safer at home" lockdown quarantine pandemic, to enjoy in our eventful 2020 and the outdoor grilling season! "AZSADA" MARINADE 6 cups OIL 1 cup SOY SAUCE 1 cup BALSAMIC VINEGAR 1 cup WHITE WINE 6 tbs PAPRIKA 6 tbs CUMIN 6 tbs WHITE PEPPER 4 tbs SALT 1 1/2 tsp TOBASCO SAUCE 1 1/2 tsp WORCESTERSHIRE SAUCE 3 leaves each BAY LEAF 1 1/4 cups LEMON JUICE 1 1/4 cups ORANGE JUICE 1 cup WATER --- === --- Makes about 13 cups or about 3 quarts of Marinade for 8 to 12 pounds of beef or pork or even chicken Recipe can be cut in half if you think it's too much, or multiplied if you need more for a HUGE party! ************ ************ ************ "Azsada Marinade" (Small Batch Recipe) -- 3 cups VEGETABLE OIL -- 1/2 cup SOY SAUCE -- 1/2 cup BALSAMIC VINEGAR -- 1/2 cup WHITE WINE -- 3 tbs PAPRIKA -- 3 tbs CUMIN -- 3 tbs WHITE PEPPER -- 2 tbs SALT -- 1 tsp TOBASCO SAUCE -- 1 tsp WORCESTERSHIRE SAUCE -- 1 BAY LEAF -- 3/4 cups LEMON JUICE -- 3/4 cups ORANGE JUICE -- 1/2 cup WATER Makes about 6-7 cups or about 1.5 quart of marinade for 4-6 pounds of meat

This was the original recipe and always thought it was funny, that it was always based around the bottle of wine "750 Mililiters" and that's how I converted it when making a double or triple batch to use for 500 to 900 pounds of Flank Steak Flap meat we had to clean just for Opening Day, then the next few home stands that followed. . . - 18 cups (or 1 Gallon, plus 2 cups) VEGETABLE OIL -- 3 cups SOY SAUCE -- 3 cups BALSAMIC VINEGAR -- 1 entire 750 mililiters bottle (which is 3 cups) WHITE WINE -- 18 tbsp (or 1 heaping cup) PAPRIKA -- 18 tbsp (or 1 heaping cup) CUMIN -- 18 tbsp (or 1 heaping cup) WHITE PEPPER -- 12 tbsp (or 3/4 cup) SALT -- 6 tsp (or 1oz) TOBASCO SAUCE -- 6 tsp (or 1oz) WORCESTERSHIRE SAUCE -- 9 BAY LEAVES -- 3 and 3/4 cups (or 30 oz) LEMON JUICE -- 3 and 3/4 cups (or 30 oz) ORANGE JUICE -- 3 cups WATER Makes just over a gallon of Carne Asada Marinade if you care to feed a small Army

You can substitute the wine with you favorite beer, or even Coca Cola, and even better Dr. Pepper!!! You can certainly cook this over an open mesquite fire grill, but you get a better "Maillard reaction" and caramelization of the unctuous beef on a flat top or griddle Just doing it over the direct flame tends to dry out the Carne Asada also, but you do what you like!!!
