I was very worried I couldn't do this at home, due to the rare ingredients, but I went to my local asian market, and they had EVERYTHING. Find one, and see if you can find all the ingredients. In total, it all cost me about 45 USD, not too bad for an amazing meal. Most difficult part was finding someone to let me borrow a rice cooker.

The sharper your knife, the easier it is for it to lose its edge, either by dulling, or rolling of the metal. That's why, with a knife, you need a good hardness to the metal, but the harder the metal, the more likely it is to shatter, as opposed to bending. This is easily observed in, for instance, ceramic knives, which are extremely hard, and thus have no flexibility in the metal, therefore they often shatter when dropped.Thus, in order to retain your edge for a longer period of time, yet not have a fragile knife, you need a proper balance of hardness and softness to the metal. Any knife can be razor sharp, but not every knife can maintain that edge. That's why honing steels are a vital component of most kitchens. They'll help to "Straighten" the metal on both a macro and micro level, meaning less time between sharpening for knives of all quality.. though softer knives will need to be honed much more often to maintain their edge. Still, anyone can create a razor sharp edge on ANY knife.. the trick is not to maintain a razor sharp edge, but one that slices with minimal effort with proper technique, which makes the edge last longer (Thinner edges -will- roll on you, blunting your blade.)
