In this video I visit my local farm, pick my own beets and put together my most favorite beet salad dish ever. Using the beets, beet greens, Greek yogurt, candied walnuts, agave syrup and aged balsamic vinegar I don' think there is a better salad out there.
Princess Diana loved beets, juiced and as salads and they were on the menu all the time at Kensington Palace. They are a Superfood, one of the healthiest foods you can eat. They help reduce blood pressure, increase post-workout recovery, enhance brain activity, promote healthy bones and much more. Harvested farm to table with these other delicious ingredients I stand by this being the best salad ever.

Beet Salad Recipe
serves 4
2 lb mixed raw beets (baseball size) and with leaves on
1 cup walnut halves, you can use pecans
1/4 cup white granulated sugar
1 Tbsp unsalted butter
1 cup Greek plain yogurt
1/4 cup agave syrup
1 tsp minced garlic or 1/4 cup shredded green garlic
1/2 onion (diced)
2 TBS olive oil
Aged balsamic vinegar (to taste)
Cut the leaves and stalks off the beets and set aside. If cooking sous vide place the beets in plastic bags and vacuum seal. Sous vide at 185 degrees for 1 hour 30 minutes. Remove from the bag and allow to cool. If cooking conventional, place the beets into a pan, cover with cold water and boil until fork tender. cool under cold water. Peel the beets and set aside.
In a large skillet add the butter and sugar and stir until the butter has melted. Add the walnuts and keep moving around the skillet until the sugar starts to caramelize. Remove the nuts to a greased baking sheet and allow to cool.
Wash and shred the beet greens. In a large skillet heat the olive oil, onion and garlic. add the beet greens and stir. Season with salt and pepper. Cook until just tender. Set aside to cool slightly.
Cut the beets into bite size pieces, layer with the Greek yogurt, drizzle with the agave, top with the warm sautéed beet leaves, sprinkle with the walnuts and drizzle with the balsamic before serving.

Please never get rid of Winston… he’s absolutely adorable!! I was watching some of your older videos and the mike was a bit gritty for the ear… these newest ones and then, are perfect. Beets are my root cuz i have been anemic since a baby my mom always gave me beet juice, beef mushed, beet candy, and steemed… Beets are my love. Thank you for this video and ALL of your others!!! Always use those "throw-away" leaves when I discover they are edible. Radish leaves with the radishes with a blue cheese salad dressing is awesome. I am in Austria so use Osterkroen Blue Cheese. Any blue vein should be good. Only use lemon juice in my dressing. Stilton with pomegranates is also a favourite - no dressing - just the seeds and stilton.

At 63 I just learned there's different types and colors of beets. The only ones I've ever seen are the red ones. Never to old to learn and that looks amazing 👏

Dearest Chef, Thank you so much for featuring beets. My departed Mom (Hungarian) used to make a great dish from beet greens and a plain roux ( quite light on the colour) She would make the roux flour and butter, wilt the greens, add salt and a wee bit of sugar. WOW. Your salad is going to be a huge hit this summer, i am growing my own beets. Cheerio Chef.

Mother's garden always included red beets. The fresh greens were steamed whole leaf. With a little vinegar and a gob of butter, they would top spinach any day!

I love beets. My favorite way is to peel and dice, put in foil and drizzle with olive oil, salt and pepper. Throw on the grill or in the oven. So yummy and they don’t dry out this way either.

Beet salads are wonderful. I never thought to use the beet greens with the roots, I'm definitely going to have to try this next time I get them (though that might be a while, most of the shops around where I am just have the roots). I usually use rocket/arugula and some combination of walnuts or pecans, goat's cheese, avocado, and some kind of tangy fruit (dried cranberries are nice, or mandarin oranges, etc). Sous-vide method is also not something I would have thought to try; looks like it works great! For people who don't have a sous-vide machine, I've found roasting them in the oven works just fine as long as you wrap them tightly in aluminium foil (that way you don't dry them out, they stay very juicy inside).

My Mum often bakes beetroot and we find them delicious. You might be right about them tightening up a bit but it certainly doesn’t seem to effect the flavour. All the best from Australia 🇦🇺

Hello. That looks great! I am in Melbourne Australia and although it's early spring I have plenty of beetroot growing in my veg garden in the backyard. I only have the red variety however I will look for seed for some other varieties and plant them. They seem to grow easily here. Tonight I cooked beet greens but with some apple cider vinegar with chilli flavour, instead of balsamic, as I had not yet found your video. I will try them again in the next few days with balsamic vinegar. I didn't know about beet salad but I will be trying your recipe soon. I just boil the beets and as you mentioned, the water goes pink however they were still delicious. I did peel them beforehand and I don't have any sous vide equipment but I will look into that method. My beets were growing in the garden one minute and thirty minutes later they were tasting beautifully sweet. I planted them so enthusiastically in early autumn and they just took off. Do you have any suggestions for using the stems? Sometimes I make stock with them but then I have deep pink stock which does not look the best. A lot of the time they go in the compost bin but there must be a better way.

Alright! I have the Anova, and am cooking now! Got it hooked up to my phone, and it was very easy to set the temp and the time! I started quite late, so I think I will cook the beets tonight, and then assemble everything tomorrow. I'll catch up on FB with a photo!

Morning Chef thanks for sharing annother great video, I must admit I do love my normal pickled beetroot on salads here in the UK, but that was a great tip about water and veg. I use a microwave steamer to save time and always boil the water first when steaming new potatoes. Am I doing it wrong ? Any advice much appreciated, Many Thanks.

Did you know that what we eat is twenty-one times more important than the air we breathe for health of our body? There are many people who worry about smog, about the negative effects that smog has on health. So... why are there few people who eat a healthy diet that is twenty-one times more important? I love this salad because it is healthy and genuine. Only those who are attentive to their diet, really love themselves. Darren, I love Aceto Balsamico Tradizionale di Modena. My mouth is watering here, as I utterly adore beets!! Thank you for the recipe Darren. I would love this too with some goats' cheese or crumbled feta on the top and a chunk of crusty fresh granary bread slathered with Normandy butter!!!!
