This is the best mushroom katsu version on KZbin! Minimal shrinkage and crispy, usually mushroom release a lot of juice after marinated even after frying it'll get soggy within seconds. This is perfect, thank you so much for sharing!

i've been cooking with these a lot lately and one thing I'm finding is that salting the water you parboil them in will make them a bit crispier - fresh water flows to salt water so a little salt in the water keeps them from taking on more water while being boiled. At least, it seems to work, I haven't studied the technique "in the lab" to see if they actually gain less weight. cutting them before boiling isn't helpful, it makes them chewier in a way I don't like.

I would never have thought of this, so I’m so glad you made this video. It is so delicious! It’s not chicken, it doesn’t taste like chicken - it’s better. It is messy to make, but it’s so worth it. My non-vegetarian family members enjoyed it just as much as the vegetarian ones. I’ll definitely be making this every time king oyster mushrooms are in stock at my local grocery store. Thanks again.

I wonder if leaving the rice paper out, or putting batter directly on the mushroom and then coat it with the rice paper, and then another coat of batter might help the paper stick better. Or maybe that would just make more of a mess.

Now this is just AMAZING!. I have a question for You. In my polish culture there's this my used to be favorite dish- the duck filled with tart apples covered with garlic, salt and marjoram, slowly roasted until all fat melted. I have been vegetarian for over 20 years and trying to make this using tofu skin tuba(just thinking how to do it) and have not been able to figure it out. Could you help me to make it. maybe you can use the king oyster mushroom prepared similar to this recipe as your mock dock, stuff it with apple pieces wrap it up somehow maybe with your tofu skin, brush it with oil, red wine and marjoram or other spices and put it in the oven to roast it for a long time? Maybe better to fry the mushrooms without using oil first, in a pan just to get some of the moisture out.

@@liv8447 Roast duck is a pretty distinct thing though. The duck meat itself is dark throughout, like beef or lamb, and there's a thick layer of fat under the skin, making it a lot like pork belly. A king oyster is too juicy to replicate the meaty part of duck and too light to replicate the fatty part of duck.

Tofu skin is on the right track. It resembles duck skin reasonably well. And there are some great traditional recipes in Asia for mock duck made from seitan. The only thing really missing if you want a convincing imitation duck is the fat layer, but there have been some really interesting recipes developed for vegan pork belly. If you do a layer of mock duck, a layer of vegan pork fat, and a layer of tofu skin, I expect you could get something like duck that you can roast and have melting fat.
