الوصفة حضرو العجينه طحين وماء واعجنوها بعدها اغسلوها بماء الى ان تصير جلاتينيه واحتفضو بماء الغسل بوعاء اخر واتركوه لمده 6 ساعات بدون تحريك الى ان ينفصل الماء عن المكونات بعدها تخلصو من الماء الطافي وحركو المواد الي بالقاع بعدها بصينيه مدهونه ضيفو القليل من المزيج واطهوه على البخار بعدها قطعوها شرائح ونكهوها شويه ملح ملعقه زيت السمسم ملعقه صويا صوص ملعقه سكر ملعتين خل اما العجينه المتبقيه فيمكنكم طهوها على البخار ايضا وتناولها بالعافيه
When you remove the gluten then what are you making the transparent noodles from? Just plain starch? This looked delicious. However, I would have to be sure all the gluten was removed from the noodles and not added back for my portion. I would love to have seen how you cut the green vegetable. Was it cucumber? zucchini? Thank you for showing this recipe.

oksills thank you for the comments. The green vegetable is cucumber, you may also add some Daikon by doing the same way to the cucumber. And yes it's starch, but if you are allergic to gluten, I don't think the gluten is 100% removed. But you can buy plain wheat starch to make the noodle like in the video, you just need to add enough water to the starch you bought, and then let it sit for hours like in the video, and do the rest steps. Someone asked about the ratio of water and the starch, I promised to figure it out, but since I'm busy with a coming exam for my career, I haven't found time to do that. If I do figure out in the future, I'll add it in comments.

thank you for your comments there's something called FenTiao made from potatoes or yams, but the procedure is much more complicated than what i do here. FenTiao is dried and sold in shops. it can be soaked and becoms soft. then it can be cooked as many delicous dishes.

I used all purpose flour. But, It doesn't matter what flour you use, what this recipe is doing is separating the starch and the gluten, the stretchy part is gluten, so if you use bread flour, you may get a little bit more of gluten.

yes, it is possible. I'll figure out the better ratio this weekend and then tell you. i recommend to soak the powder long enough in the water to let the powder be combined well with the water.
