கேழ்வரகு இலை அடை
தேவையான பொருட்கள்
அரிசி மாவு - 1 கப்
கேழ்வரகு மாவு - 1/4 கப்
உப்பு - 1 சிட்டிகை
நல்லெண்ணெய் - 2 தேக்கரண்டி
சுடு தண்ணீர்
துருவிய தேங்காய் - 1 கிண்ணம்
வெல்லம் - 1/4 கப்
ஏலக்காய் தூள் - 1 தேக்கரண்டி
எண்ணெய்
செய்முறை:
1. பாத்திரத்தில் அரிசி மாவு, கேழ்வரகு மாவு, உப்பு, நல்லெண்ணெய் சேர்த்து கலந்துவிடவும்.
2. பின்பு சிறிது சிறிதாக சூடான தண்ணீர் சேர்த்து பிசைந்து மாவு திரண்டு வந்த பின் சிறிதளவு எண்ணெய் சேர்த்து பிசைந்து10 நிமிடம் ஊறவிடவும்.
3. மற்றோரு பாத்திரத்தில் துருவிய தேங்காய், வெல்லம், ஏலக்காய் தூள் சேர்த்து கலந்துவிடவும்.
4. வாழையிலையை சிறு துண்டுகளாக வெட்டி கொள்ளவும்.
5. பின்பு அதில் எண்ணெய் தடவி தயார் செய்த மாவில் சிறிதளவு எடுத்து உருண்டையாக உருட்டி இலையில் வைத்து தட்டையாக தட்டி கொள்ளவும்.
6. பிறகு தயார் செய்த பில்லிங்கை வைத்து இலையை மூடவும்.
7. இட்லி பாத்திரத்தில் தண்ணீர் ஊற்றி கொதிக்கவிட்டு பின்பு தயார் செய்த அடையை வைத்து பாத்திரத்தை மூடி 15 நிமிடம் வேகவிடவும்.
8. அருமையான கேழ்வரகு இலை அடை தயார்!
