Excellent - thank you, chef! I am from Lar and living in the US for a long time. I loved all the details you shared, especially letting the meat dry. I remember my parents used to blow the cubed meats using a fan for almost a day (not soaked in the marinade yet). This helps to keep the juice inside. The marination is another day of course! The pleasure will all be mine. I would be happy to meet you as well. Fortunately, I sold the Shiraz Restaurant on Jan 2018. Restaurant business is one of the hardest and not everybody can run a restaurant. And unfortunately, buyer sold the restaurant less than 1/3 for what he paid for, and now it's a Raman Restaurant.

Sure will do that! You can use and good beef cut as long as you like it! I used part of Rib Eye. The good thing about this recipe is: concentrated yogurt will make your meat very tender. 💓💓💓💓💓💓💓

Fantastic video. Yeah, Kababe Lari is really tasty. the only thing that I heard from my Lari friends is that they used to hang the meat or keep it in front of Fan (پنکه) for hours or even 1 day then they start the marinating process. Anyway another educational video, well done.

Will do soon! But it is very easy. just put some yogurt in the cheesecloth and hung it for 5 to six hours and let the juice or water from yogurt to drain! That is how to make it concentrated. Don't worry it the yogurt it out of the fridge, noting will happen. As you know the yogurt is a bacteria itself. But it is a good bacteria

Yogurt juice it's basically water in the yogurt. Just buy a cheesecloth and place the yogurt in the cloth, hang it over night and let the water drain in a bowl. You must not squeezed the yogurt in the cheesecloth, and does not need to be placed in the fridge. If you have anymore question please ask.
