1.5lbs ground beef . 85-15 (lean) or 75-25 to taste .5 lbs ground lamb 2 yellow onions ground 1 tsp salt 1 tsp pepper 1/8 tsp garlic powder 1 tsp sumak 1. grind onion and drain all onion water 2. combine beef and lamb and onion in a bowl 3. add salt and pepper and garlic powder 4. add sumac into the mix 5. mix throughly 6. wet your hand in warm water and grab meat and place on skewer

How long do you mix it for? I heard that if you don't mix it long enough, it will also not stick to the skewer. Lastly how long do you drain the water out of the onion?

@@sadjaz a few minutes of mixing is enough as long as all the parts are sticking together nicely when you make it into a ball...for the onion, just push down the onion with the back of your hand a few times to get any remaining water out of it, you don't have to wait. I just set it aside in a drainer until I'm ready to mix it in.

@@sadjaz I just made it this week, and I mixed it for a few minutes, however I did double the ingredients since we wanted leftovers. The onion didn't drain as well as I would have liked, and I may leave it out over night next time. If i worked the meat well on the skewer is stuck pretty well. But it did break apart on a few. However they were all delicious!!!! Thanks for the recipe.

Hello from Russia! Thank you for video. We in Russia adding 150 gramms chiken breast for 1kg to beef. It makes your grounded beef more steaky like a glue. And chiken prevents beef from shrinking, this is why it never falling from squwers.

Thank you for sharing your story. Very impressive at 12 years old to learn how to cook for your dad. These days, children don’t know how to put their dirty dishes in the dishwasher. I love Persian foods and beef or chicken kabob koobideh are my most favorite. I love many different dishes from your country, i love the hard rice with my kabob. Thank you for sharing your love of cooking. Your kabob looks so yummy. Others show you have to chill the meat before and fussing about meat falling off. Yours looks so good without any fuss

Yousef: Thanks so much for this video! I made a 4 lb batch of koobideh kabobs for friends tonight and your approach really helped. I ended up with 2 lbs of beef (15%) and 2 lbs of lamb along with the two ground yellow onions, sumac, garlic powder, salt, pepper and I added a little cinnamon and onion powder. I've tried koobideh in the past and have always had trouble with the meat falling off the skewers (I also have the 1" wide ones), but your trick of dipping your hand in warm water after putting the ball of meat onto the skewer made all the difference. It seemed to cause the meat to act as more of an emulsion and after building up 8 skewers, I put them into a chest freezer to rest before throwing on the grill. They turned out really tender and juicy and were a big hit.

I lived in Iran in the 70s. My wife is Baluchi. I lived in the rest of the Middle East most of my life. I cook food from everywhere but love to cook Iranian food and especially eat Iranian food. We cook everything making various types of nan and mast from scratch. Of course we grow all of our own herbs to make the food real. Now if we can just get meat from Iran we would be very happy. Thank you for your videos we love them.
