Fluffy Kaiserschmarrn - oven recipe. With us, the Kaiserschmarrn was never used for dessert but as a main dish. For a dessert we found that much too powerful, because my boys who liked to have eaten so, it gave him just for lunch.
I always make my Kaiserschmarrn in the oven, so I have in this time ever a simple compote e.g. Pears or apple and can of course cover the table.
It is also possible to make the Kaiserschmarrn only in a pan, but leave it to boil at a low temperature, golden brown from one side and from the other.
We always eat our Kaiserschmarrn without raisins, but this is a matter of taste, of course you are welcome to join in the dough. We prefer to caramelize the meat after baking, sugar and toast almond flakes ... very delicious.
160 g flour
30 g sugar (possibly vanilla sugar)
250 ml of milk
4 egg yolks
approx. 150 ml of mineral water
4 proteins
1 pinch of salt
