Nausagar is actually Ammonium Chloride ..main purpose of that chemical is to remove oil and greasy layer over that metallic surface.On heated metal surface it produces Ammonia vapours which is alkaline. Kalai is basically a metal called Tin..which melts easily and when rubbed with cloth..forms a thin layer over brass or copper surface which helps the utensil against acidic attack by items used while cooking.Thick metallic utensils were having slow heat conduction and helped slow cooking in a better way..!

Yes. I have fond memories of childhood too. Mummy wud tell me to take the utensils to the kalaiwala who wud come with his cart on the street below. And we kids wud watch with fascination the entire process. Now i realise how hard they work. In hot scorching summer heat, the man wud stand under a nearby tree with his cart. Hats off to these guys Today i have brass utensils but finding a kalaiwala has become a rare phenomenon 😟

The western world discovered canned food, tetra pack and tin foils in the twentieth century, while Indians have been tinning their copper, bronze and brass vessels since thousands of years. We are forced to follow the so called lifestyle which is controlled by govt not by individual and still think it is our freedom. Inventions far more advanced than what modern science can explain. All copper cookware has to be tinned to keep food from pulling the copper metal and giving it a metallic flavor. Brass cookware although not as good as copper can also be treated the same way. The downside of brass is it is much more likely to have lead in it from various recycling streams. The ammonium chloride block the guy briefly shows you is broken up to form the white powder he rubs the rag or cotton material in. It is a flux, and is what makes the white smoke you see. Other things and fluxes will work, but ammonium chloride ( aka sal ammoniac) is a time tested favorite. He should be using pure tin to 'tin' the pot, but given the economics of his trade it could be almost anything, including lead solder. For those wanting to try this at home you could use lead free solder, available in hardware stores. Make sure the solder says lead free. It will usually be 99+% Tin (St = Latin Stannum= Tin). The remaining percentage will be copper or silver. You can also buy pure tin on the internet, but make sure it's pure and doesn't contain any lead. A Tinker was a person who used to travel around and repair cooking vessels. Copper pots could be patched, riveted, and even small holes filled with tin or a copper rivet. A large copper, brass or iron pot was a family treasure. To my eye he just put on enough tin to make it shiny and it won't last long.

No doubt you could poison somebody with enough of it's compounds, but using it to coat cooking ware is a safe time tested procedure. I mention again that ONLY pure Tin should be used or lead free tin solder with silver or copper as a minor percentage (

It is brass utensils which was used in ancient India for preparing food.according to ancient Indian culinary science and ayurveda,utensils prefered are- clay utensil( best) ,brass , bronze,iron . obviously there were instructions with which food your could use which metal utensils.brass needs to be taken care off ,so what they are doing in video is ,adding a layer of alloy called tin.this will help to cook food slow and steady.this will help prepare healthy and tasty food.

In my childhood days these kalaiman used to visit our colony in Karachi all the neighbours brought their pots pans etc to polish at one place where he dug a hole to make fire place for the procedure .we used to watch him work and wanted to see pots & pans shine at that time my parents had a huge collection of copper things big round sanies pots pans big spoons even farshies of hukkas

Rishi kesh - Earlier, most vessels were made of copper, bronze or sometimes even brass. The common metal element among the three is copper. Now when people cook food in copper, bronze or brass some extremely small amount of elemental copper gets dispersed into the food and finds its way into the human body. The human body can only tolerate extremely low amounts of metal in the body, and the kidney tries to filter out the excess copper. However, even kidneys have a limit of how much copper or other metals they can cleanse. People cooking food in copper based vessels regularly, in some cases exceed this limit, causing a condition called copper toxicity. The process you see lines the copper vessel with tin. This makes the vessel inert and protects the copper from dispersing into food. Tin on the other hand is inert, and can easily be cleansed by the kidneys. So this process of lining copper based vessels with tin is done as a precaution to prevent conditions like cirrhosis, Wilson's syndrome, Alzheimer's and other conditions caused by excess copper.

Brass(peetal) reacts with food especially acidic and changes the taste. You can't leave food in brass utensils after cooking and had to remove soon after, but in earlier time brass was used to make kitchen utensils. So the polishing of Tin (kalai) was invented so that people keep on using the existing utensils. However eating in brass bowl, tumbler, dishes is good for health except sour food.

Copper reacts with oxygen in air and produces blue layer (may be copper or Cupric oxide) on copper vessel which mixes with food on cooking in it and if such food is consumed it causes food poisoning and diarrhoea vomitting etc . So if copper vessel is coated with Tin metal (that procedure is called Kalai) then it prevents oxidation of copper so no problem in cooking . So if u r using copper vessel for Cooking , Kalai is must

Rates for this used to be per Kori (twenty items) not in dozens etc and was between rupees 12 to 14 in pre Sixty Era. Mashkis and Kalaykars had almost disappeared from/in Delhi.

Yes this is very old technique street hawkers use to go round in remote village areas in 60s & 70s and do this practice once or twice every quarter. There's a very famous Pakistani film song " panday kali kra lo"

Then his so called secret known to tens of thousands of craftsmen as well as any industrialist manufacturing this stuff. Only common people won't know and in a generation or two can be fooled by some rotten process used by future manufacturers. These people are not inventors this has been common process used for hundreds of years.

Hamare ghar par bhi ghar ke baahar kalayi karaty they peetal-kaansey ke khaaney aur pakaaney ke bartanon par.
I believe this is tin plate on top of copper which is poisonous. Also Aluminium should not be used, nor should non stick be used. I bought I clay pots made in India or I use stainless steel, in the past I’ve used flame proof Pyrex too.

It's not a tin plate on top of copper, it's a polish material for copper and it's not poisonous, it's apply on copper to protect from chemical reaction from the vassal by cooking long time on it.
