Here's a step-by-step recipe for making the Melt in your mouth Butter Cookies coated with chocolate and sprinkled with desiccated coconut:
Ingredients: (3 ingredients)
Unsalted Butter 7 tbsp (100g)
Icing sugar / powder sugar 7 tbsp (60g)
All purpose flour 1 cup (120g )
- Jam 2 tbsp
Note : you may increase the sugar with an addition of 1 or 2 tbsp.
Step 1: Prepare the Cookie Dough
1. Preheat the Oven: Preheat your oven to 338°F (170°C). Line a baking sheet with parchment paper.
2. Cream the Butter and Sugar: In a large mixing bowl, beat the softened butter and granulated sugar together until light and fluffy. This usually takes about 3-5 minutes.
3. Sieve and add Dry Ingredients: In the same bowl sieve together the flour,
4. Combine Wet and Dry Ingredients: Gently combine the dry ingredients into the wet mixture, mixing until just combined.
Step 2: Shape and Bake the Cookies
1. Shape the Cookies: Scoop the dough into a piping bag with a Nozzle tip 1E. Hold the piping bag vertical over the baking tray and pipe out a swirl as shown in the video.
2. Refrigerate: Refrigerate the cookie tray for about 20-30 minutes. This is an important step. Please do not skip.
3. Bake: Bake the cookies in the preheated oven for 12-14 minutes, or until the edges are lightly golden brown.
4. Cool the Cookies: Allow the cookies to cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
Step 3: Serve and Enjoy
Serve: Once the chocolate has set, your coconut cookies are ready to be enjoyed! Store any leftovers in an airtight container at room temperature for up to a week.
