for the answer G (7:00), the easiest way I can explain it is if you imagine both of the circles as a clock, instead of numbers it is shapes. We see the G shape positioned at a very uncomfortable angle for us so you should turn the right clock in your head (or turn the screen) and leave it in the position of 6 oclock (or 12 oclock both works), here you can see it clear as a line going across a circle in 180 degree, not a stop sign. DO the same for the left side, if it was acting the same way as how the other shapes behaved on both side (flipped), the G circle wouldn't be angled like \ instead of this ---- straight across.

Yeah, I just rotated them in my head to a bottom spot and... got kinda stumped by that stop sign. It just seemed... extremely weird to me. So I checked a couple more times until it finally clicked that the line is horizontal on the left one, not diagonal!

2:54 Banger alert. Also, I see what you mean with the 2nd puzzle where the answer was G. If you look at the slash, though, the left one is more perpendicular to the little star shine thing in the middle. Rotation or reflection wouldn't affect that much. That's the best way I know to see it.

Here is an even easier way to think about it: each shape has been mirrored down the center except for the stop-sign. follow the lines made by the center star and flip each shape along this imaginary axis. The answer becomes obvious then.

If you look at the line in G, it points to the tail thing of H on the left but on the right, it points to the corner of the main block of H, so it was turned slightly on its axis

No, the slash on the sign on the left is perpendicular to the ray of the star pointing at it, and flipping the image won't change that. You can see on the right that the sign has been tilted slightly.
