OP made it an argument. He could have started with "I'll lend you the money for the trip, but you'll need to pay me back" or even "I can lend you what you need to cover your part" and if she said no, then yeah she's a jerk. But the way he only added it as an option after he made it an argument, telling her off for it, and guilt tripping her over their double date makes it a really shitty thing for OP to do and is probably why she said no to it.

OP took what might have been a small mistake, forcing OP to pay now and have his GF pay him back later, and made it a huge issue that might make them break up and probably forced them to cancel the double date. His overreaction and turning it into an argument is OP's fault, not his GFs. People make mistakes. Act like an adult and move on to find a solution. Shitting on his GF for it killed any chance of that. Like I said, if he's offered the lend solution first, a reasonable solution that basically returns everything to status quo in a couple of months as if the GF hadn't fucked up, then if the GF refused it, she would absolutely be the jerk. But I know for damn sure I would be less likely to accept a proposal from someone who just treated me like shit for a mistake I was honest about.

Story 1: Wow... i can't believe that that Karen did what she did here, but moreso that she didn't get the tar beaten out of her by the OP or even a bystander. Claiming you need something more then someone else is bad enough, but to physically pull it out of a sick childs hands in a store like that? You are especially stupid, entitled and mean. Story 2: OP is by no means a jerk here, the gf is though. This is one of the many reasons why you both dont overspend on a planned trip and why you dont stay out drinking all night. It would've been slightly different if the OP had offered to pay for the whole of the double-date here, but the gf to just expect him to pay for her share is a bit unreasonable and unfair. definitely disagree on story 2. Shit happens. All OP had to say in the beginning was "Sure, but you'll need to pay me back at some point." Instead, OP is who made it a big deal and an argument, offering to lend only after bringing up a bunch of other stuff. If OP had suggested lending immediately, the GF might have said yes and they could have gone. But the fact that OP started by guilt tripping her over their date and chastising her over her decision making made this a much bigger deal than it had to be. If OP had started by saying "I can lend you the money, but you'll need to pay me back" and she said no at that point, I'd agree with you. The fact that it was tacked on AFTER OP made it an argument kinda makes me say he was the bigger jerk there.

She was aware of the cost and her financial responsibility and when it was set to occur. She should have put the money aside before going out drinking but she didn't and that's completely on her. If she wanted to borrow from him, SHE should have asked him if he could loan her the money, not just demand that he pay for her. She screwed up, not OP, so I can't imagine where you get the idea that he should've been sucking up to her and offering to pay her way or to lend her money right off the bat. Yes, the GF's initial proposal of OP just paying for it is one I disagree with. But OP could modify that proposal by changing him paying to him lending, or figuring out exactly how much she was short and covering that. Either option would be better overall. It would mean no argument. It would mean going on the double date. Here is what OP did instead: He didn't propose a modification to her solution straight away. He asked her how she could do this, told her what she should have done, chastised her for what she did and probably pissed her off doing it. OP started an argument that didn't have to happen. The GF started a small fire, then OP poured oil on it and now it's out of control. That's why he's the bigger asshole here. Not because he caused the whole thing. After pissing someone off, do you really think they will be more or less likely to say yes to something?
