This casserole was a favorite of my mother-in-law Gloria. She would make it, dish it out in portions and freeze it. When she was ready to have it, she would thaw it out, heat it up, and enjoy it as if it was the first time she had eaten it. She offered it to me one day and I have to tell you, I was amazed at how delicious it was. And today, I was amazed at how easy and simple it is to make. I hope you will try this delicious casserole and let me know what you think of it. It is another one dish meal. Recipe below.

Ingredients:
2 whole chicken breasts, boned, skinned and cut into 2X4 inch pieces
1 tsp salt
1/2 tsp pepper
2 Tbsp oil
1 bundle fresh asparagus, cut into pieces, or 2 - 10oz packages of frozen
1 can cream of chicken soup
1/2 cup mayonnaise
1 tsp lemon juice
1/4 tsp turmeric or 1/2 tsp curry powder
1 cup sharp or mild cheddar cheese
Directions:
Sprinkle salt and pepper over chicken. Toss. Heat oil in 10inch skillet. Add chicken and cook until browned lightly. Add cut up asparagus to 8X8 or 9X9 baking dish that has been sprayed with non-stick cooking spray. Place chicken over asparagus. In a medium bowl, mix together the cream of chicken soup, mayonnaise, lemon juice, and turmeric. Stir well. Pour over chicken and asparagus. Sprinkle cheese over top. Cover with aluminum foil. Bake in preheated 375-degree oven for 30 minutes or until bubbly and slightly golden.
