AKKI ROTI
INGREDIENTS:
* 1 cup Rice flour
* 1/4 cup Carrot, grated
* 1/4 cup Cucumber, grated
* 1/4 cup Onion, chopped
* 1/4 cup fresh Coconut, grated
* 2 Green chilies, chopped
* 1 tsp Ginger, chopped
* 10 to 12 Curry leaves
* 2 tbsp Coriander leaves, chopped
* 1/2 tsp Ajwain
* Salt, to taste
* 1 tsp Cumin seeds
* Water, as required
* Oil, for cooking
METHOD:
* In a bowl, combine rice flour, grated carrot, grated cucumber, chopped onion,grated coconut, chopped green chilies, chopped ginger chopped, curry leaves, coriander leaves, ajwain, salt,cumin seeds and . Add water gradually and mix everything well until it forms a soft dough.
* Take a small portion of the dough and shape it into a round ball. Place it on a banana leaf . Use your fingers to press and flatten the ball into a round shape.
* Heat a tava (griddle) and spread some oil on it. Place the flattened akki roti on the tava and remove the banana leaf ,then cook until it's golden brown on one side. Flip the akki roti over and spread some oil on the other side. Cook until both sides are golden brown and crispy.
* Serve the akki roti hot with chutney.
