I tried this for the first time at my neighbor's house and I was very surprised when she said that it was actually watermelon rind 😯
It is very interesting to snack on and is very easy to make.
It takes a little more time, but believe me, it's worth every minute.
It can be dried and nibbled like sticks, used as a decoration for sweet dishes, consumed as a sweet and stored in jars.
All you need is
- watermelon rind (about 400g)
- 1/2 teaspoon of baking soda
- enough water to cover the entire crust
Leave it in the fridge for at least 5 hours and then rinse the peel well, boil it for 3 minutes in clean water and strain it.
Add to one pot
- 3 cups of sugar (about 350g)
- 3 cups of water (600 ml)
- cloves and cinnamon as desired
put on the fire to dissolve the sugar and add the cooled watermelon rind.
Cook everything over low heat until the crust becomes transparent (about 40-45 min.), stirring occasionally.
Then add the juice of 1 lemon and some grated zest. Cook for 2 minutes and let it cool down a bit.
Serve warm or cold, or store in glass jars.
