Could I point it at a registry like ECR where my built docker containers lived? Is this a way of providing a registry for custom docker images?

Your docker images can reside in a custom docker registry like dockerhub, gitlab or basically any registry that supports a username and password/token authentication mechanism. Unfortunately AWS ECR doesnt support that. You will still need a Workspace Registry to point your Kasm deployment at that contains a list of the workspaces/images which will be fetched from the docker registry you define
