KATHIA WARI CHOLAY RECIPE INGREDIENTS :
Boiled chickpeas 250 gm
Boiled potatoes cut into squares 4
Oil ¼ cup
Turmeric ½ tsp
Chili powder 1 ½ tsp
Yellow color ¼ tsp
Water 2 glass
Corn flour 2 tbsp.
Coriander roasted and crushed 1 ½ tsp
Cumin roasted and crushed 1 tsp
Chaat masala 1 tsp
Onion chopped ½ cup
Salt 1 tsp
Ingredients for Green Chutney :
Chopped coriander leaves 1 bunch
Chopped mint ½ bunch
Green chilies chopped 8
Vinegar 3 tbsp.
Salt ½ tsp
Garlic 1 tsp
Sugar 1 tbsp.
Cumin 1 tsp
Coriander roasted & crushed 1 tsp
METHOD :
Blend all together.
Ingredients for Red Chutney :
Ketchup ½ cup
Tamarind pulp ½ cup
Crushed red pepper 1 tsp
Ginger powder ½ tsp
Salt ½ tsp
METHOD FOR RED CHATNI :
Mix it all together, chutney is ready
METHOD :
Heat oil in a pan, add all the spices, and fry well, add in boiled chickpeas and aalu, thicken the mixture with corn flour slurry, mix all the ingredients together, and serve with both the chutney, papri, and kadak roti.
