I'm so excited to try your Coke Chocolate Cake! I love that you're not ashamed to add sugar to sweeten this cake up. Butter is always a must! My husband will love this cake. I have great memories of our son, as a teenager, enjoying this cake! Different recipe, but your recipe appears simpler & that's appealing. the thing with the marshmallows is that you want to pour the hot wet part over the dry it to soften and melt it up and beat it with an electric mixer to mostly dissolve it into the cake so you dont have whole chunks. taking a shortcut with the microwave wont get you the proper heat needed so make the wet in a saucepan. adjust the sugar to compensate for the addition of marshmallows as marshmallows is just sugar anyway. i feel like the marshmallows helps add a bit more fluff to the cake.

Hi from Melbourne Australia..if you coat the marshmallows, even dried fruit, any extras in flour..it creates a stabilising barrier to prevent it floating to the surface..it will distribute evenly throughout..regards

During war time sugar was fashioned. This recipe was developed to use sugar of other products, marshmallows and coke, because sugar was limited.

Kathy, you do NOT want to use an off brand coke-a-cola either. I love White Lily flours. Tammy over on Collard Valley Cooks got me to using the flours. I'm not a fan of marshmallow anything especially the chocolate marshmallow Santas.
