To get a really meaty texture in the tofu, freeze it. It will turn yellow and then white again when it thaws. Squeeze out as much water as possible without breaking the tofu. The texture is amazing, spongy, meaty and absorbs flavors. It also holds its shape while cutting and preparing.

Interesting trivia about Panko (bread crumbs): they don't bake them in an oven during the production process. Instead, they literally run electricity through the batter to cook it. This is why it retains its crispiness longer than baked crumbs.

Love this!! Just a side note... the mild flavor Golden Curry that's sold in Japan lists "GELATIN" in the ingredients. Maybe they swapped it with something else for products exported to other countries!! Just wanted to let you know :)
@sarahdee3743 жыл бұрын
I just checked on Amazon. At least one brand (S&B) they're selling does not have gelatin. But does contain palm oil and MSG. I love the prices at my local Asian market, but am very careful about reading labels. It seems some brands are not as "clean" with ingredients as I'd like. For this recipe I'll probably go with his alternative to the blocks.
@kitskun53963 жыл бұрын
@@sarahdee374 it is unclear if the flavourings labeled on the asia S&B Golden curry are vegan as some of them are most often derived from a form of meat or fish (sardines) they do say it is meat and fish free but do not claim it to be vegan so i find myself quite confused.
@sarahdee3743 жыл бұрын
@@kitskun5396 As I said I've often found SOME other cultures to be not as aware of vegetarian and/or vegan needs as some others. Like I've gone into a Chinese or Thai place that lists a dish in the "vegetable" section of theri menu and inquired further only to be told something like "no meat, just fish sauce or chicken broth" etc. So I'd as I said on this particular item I'm going to use the alternative ingredients that Gaz made available. I believe if gelatin is not listed as an ingredient it's likely safe. I guess just use your best judgement, often that's the best we can do.
