Squwezing the water from the Jackfruit is definitely the way to go.. Thank you for spreading the word. I use my potato ricer to squeeze out the excess liquid. You can get them nice and dry. Saves laundering kitchen towels. I do this with greens as well - often with spinach and chard I've frozen. Saves green stains on kitchen towels too! I bought all your books - great for making carnivores reconsider the taste and variety of vegan foods. Definitely a fan .

Man, I'm not vegan but still tried this. And wow, it was incredible. Love the fact you're not trying to give that meat flavour as some people do and just keep the meaty texture of the original recipe. Never tried to eat Jackfruit like that, and what a good surprise I had.

If you want to get the briny taste completely out you need to spend more time prepping it. It needs to be drained, rinsed, boiled and then squeezed in order to give the best neutral flavor and meaty texture.

Make sure you have it at the correct ripeness for cooking- if it's too ripe, it'll be too fruity for the dishes. (I could be wrong, but this is what I remember others saying.) Enjoy all that fruit for us!

so cool! in brazil we have a dish called escondidinho (little hidden) usually with carne seca (it’s a kind of dry meat) and smashed cooked cassava. I’ll totally try to make it with this jackfruit as in the second recipe

The first time I had ever had Shepherds Pie was when my husband was stationed in England about 35 years ago. I have been thinking of making a Shepherds Pie with Jackfruit recently. The nearest place I may be able to find it is about 40 miles away. So it calls for a special trip and asking a friend for a ride. I have used Jackfruit in my plant based chili and it looks like a tastes like shredded meat when it is done. My 'secret' ingredient in my chili is pureed pumpkin. It helps with the texture so that the chili is not so watery. My son, who is not vegan, likes my chili and some of my other foods, does not know about this one ingredient. All he cares about is that it tastes good. I also have some other ideas for Jackfruit. Thinking of plant based burgers with lentils. Thank you for sharing.

I made a variation of the shepherds pie. Instead of mushrooms I used tofu. Instead of carrots I used broccoli. I made cashew gravy instead of using tomato paste. It turned out delicious

One of my favorite versions of the recipes. I do get bit impatient and thicjesauses with chia seeds and/or potato (NOT) corn starch. Always soak out brine before squeezing liquid out with my tofu press.

In my country we used to cook jackfruit on many recipe such as Curry or coconut soup on the party or wedding ceremony. Now I am in Costa Rica and really miss it a lot
