Definitely hike to the bottom of wailua Falls. Takes like 10 minutes and is completely worth it. Super fun.

Princeville Ranch Adventures is awesome. HIGHLY recommended. They have multiple adventures that really feel like adventures, but are pretty accessible for most people. I have a health condition that makes most hikes and other feats of physical endurance impossible, but I was able to do a horseback adventure at Princeville Ranch no problem. We got to ride horses across pastures full of cows and monarch butterflies, with both mountain and (distant) ocean views. We took a short steep trek down to a private secluded waterfall that we got to swim in and walk behind. They had a picnic down there for us (including a gluten-free option for me!) after our swim. Then we trekked back up, crossed the river at the top of the waterfall a couple of times, and did a brief (6-8 feet high) rock climb (super easy). Then rode the horses back across the pastures to where we started. SUPER fun, and the guides were AWESOME. It was one of my favorite parts of the trip. If you like to get hands-on, to actually physically experience things, this is a great option. There are lots of options for sight-seeing, but this makes for a nice change from that. You don't just get to see Kauai, you get to experience it. This is one of those special things that isn't "look, but don't touch".

The pinnacle of Kauai is the Na Pali coast.

There's also a cool tubing adventure over on the Waimea side of the island. You get to float along on inner tubes on the old sugar cane canals, through caves and such. I haven't done it, but it looks really fun and unique.

WOW! I live in Florida and I got what you are saying, but like Florida, your economy and jobs depends on tourists. It is true that tourists can be rude, obnoxious and the big hotel chains are hurting the local shops and B&Bs but what would happen to the Hawaiian economy if all tourists left?
