What psi is the spunding valve set to during this fermentation. Btw great video 👍

10psi and under for ale. 15psi (one bar) for lager.

After adding the yeast, did you top it off with any co2?

No. Let the pressure build naturally. The yeast love it that way.

What Carboy is that

It's not a carboy. It's one of our Australian Made PET pressure fermenters called 'Chubby'. It's a 30 litre size and capable of fermenting, carbonating and serving the beverage. You should check on out! You should check 2 out! They make brewery life/processes easy. Same hardware on the lid as a 5gal/19L ball lock keg.
