Keto Gluten-free Bread with Coconut Flour

This gluten free and nut free bread is free from flaxseed meal and oat fibre, made from coconut flour with no coconut aftertaste. So fluffy and soft that it reminds me of the regular store bought white bread. 🍞
Pan size: 4 x 4 x 3 inch (10 x 10 x 8 cm) square pan
INGREDIENTS
4 large egg whites at room temperature
pinch of salt
½ tablespoon (6g) powdered erythritol (optional)
4 large egg yolks
⅓ cup + 1 tablespoon (44g) coconut flour
3 tablespoons (25g) psyllium husk powder **
2 teaspoons (8g) baking powder
1 tablespoon (15mL) apple cider vinegar
1 tablespoon (15mL) avocado oil or any oil of choice
½ cup (120mL) warm water
egg wash (optional)
sesame seeds (optional)
Bake at 350°F (180°C) for 55-65 minutes.
*I used whole psylliym husk and just blitz it using my magic bullet. The store bought powdered psyllium husk is much more darker than the whole psyllium husk .
*NOTE: For best results, I highly recommend using the metric/gram measurements (using a digital scale), rather than the standard/cup measurements.

I Rarely comment but I just had to ! I tried this recipe today and OMG ! This is the best keto bread I’ve ever had ( I tried several keto bread recipes before and they never turn out good ) but THIS ? @@ketoserts I followed the recipe 100% but it just won't raise much....Not sure if I am missing something here? Do we need double sided heating elements when it comes to oven or is there a technique when mixing the dough? Thanks heaps! Lol

I like how this is a nut free recipe. I know it has coconut but the fact it doesn’t have almonds in it is great. I’m sensitive to almonds and almost every low carb bread uses almond flour. Thanks for sharing your recipes with us 💖

I have a tip to everyone baking bread; use high quality bread tin. I had made many bread recipes from Ketosert before, and they failed because I was using cheap thin ones. 🌹

Just made it. Amazing! Very tasty, texture is spot-on, very passable for actual bread. Don't know if I would eat it on a strict ketogenic diet, but it does make a great AIP bread replacement. I very much appreciate the fact that it is a very forgiving process to make it: despite me having to work with only frozen eggs, the recipe still turned out delicious. And most of all, I love that it doesn't require any weird, hard-to-get, super expensive ingredients. Thank you very much, @ketoserts!! I used my Ninja tabletop multigrill for this since this is such a small loaf (usually have to lower the Ninja grill miltigrill by about 25-30°F for any baking recipe) I did leave it in the "oven" for about 5-10 minutes after and then, after cutting off a piece, baked for another 10 mins upside down, out of the form. I liked it so much I immediately baked another, this time doubling the recipe.

I made this and it did not rise. To be fair, I used cold eggs in a nutribullet because I don’t have the mixer thing, maybe thats why. Also my baking powder may have been expired lol. BUT it was bread-like (just flat) and it tasted buttery and delicious. I was afraid the psyllium husk would be strong but no. Bo coconut taste either. I had it with strawberry jam. Apenas empiezo con el estilo keto me gusta muchísimo el pan 🥖 que es mi perdición junto con las tortillas ,porque Mexicana jajaja... y cuando por salud tuve que dejar carbohidratos como esos, sí me deprimí. Pensé ya no hay más cosas dulces ni postres 🧁 pues por lo menos me dejan el queso ... y descubro tu canal 🥰😘😍!!!!! I tried it and it’s the best keto bread so far! The walnut bread of Heavenly Fan was great too, but different, it was dryer ! So I made this recipe with only one modification: I put three whole eggs and one egg white... worked amazing! You can also try to bring down to only two yolks if, like me, you have liquid egg white in yur fridge. I divided the mixture into two batch and let it cook for 45 min at 350d Fahrenheit. Also I didn’t want it to taste too much like psyllium husk like another bread I did, so I only put 20g, and then added 10g of chia seeds (since I put no 4th egg yolk, too). Miam! I recommend, especially if you try to veganize it a little, cause it’s alottta eggs!

same as below the best I have tried and I have tried countless coconut and almond flour but almond flour is a nut and i find it hard to eat after a few slices and usually throw it away, this recipe is great :-) so thank you thank you :-)

Made it! Haven't tried it but I'm very optimistic! Struggling to let it cool completely before cutting! I didn't have the right pan so I used a small glass mixing bowl. Seemed to work perfectly! Update: After waiting patiently for it to cool I finally tasted it and I am so pleased! Really does the trick! Going to try adding some rosemary to the next loaf!

I've made this like 6 times already and made modifications that worked for me: i use only 2 big eggs total + 1 flax egg and i replaced the psyllium husk that i do not have and also not willing to pay an exaggerated price for it here( Israel )with 40gr golden flax meal and 10 gr chia seeds and it is just perfect! i am still looking for a baking tray like yours so it will be high like a real loaf, i use an english cake and i wish it will raise more, but after experimenting with the baking powder by adding more- it does not work- it comes out a bit grainy and it brakes into piece when slicing, also in an english cake tray 45 min baking at 180C in a toaster oven pre heated is enough. next time will try with xantahm gun and let you know. thank you! i am doing keto for only 2 months, tried many recipes but this one is a winner in taste and how it toasts!

This turned out so good! I was doubtful because of past experiences with coconut flour but the flavor of it here is very very insignificant and didn’t bother me at all. I made it in a stand mixer, and used a loaf pan that I halved using a divider made of aluminum foil folded up to make a sort of wall. Great texture and wonderful for spreading butter on to! Thank you for this- makes gestational diabetes much more manageable :)

WOAh!! the texture and elasticity of the crumb is amazing! Im trying a lot searching videos and all of them use vital gluten, and all kind of fibers or gums (xantan, guar, bamboo etc) and I think I was missing using oat fiber or bamboo, but yours is simple and so good. One question how necesarily are the eggs for the elasticity ? I tryed to make mine with flaxseeds and psyllum and some few egg whites and I get a sticky consistency but when I bake it the bread rises really well in the oven but inside it was hollow with all the crumb caked on the bottom, any ideas of what im doing wrong? Are the eggs the key or just using the correct proportions?
