A nice recipe, but imitation crab meat/surimi is NOT suitable for keto, as it’s full of multiple added starches and added sugar. It’s only about 40% fish. 100g contains about 13g carbs. I suppose if you used 3 sticks in a roll that would equal about 6g carbs from the crab sticks, but the refined sugar definitely has the potential to spike your blood sugar and kick you out of ketosis. I wish I could find a low carb variety of crab sticks as I love them. Just a warning for anyone considering eating them on keto.

You're right. Strictly speaking, it's not 100% suitable for keto, but I tried to make it more approachable because most people cannot easily obtain real crab. However, if you're on a keto or low-carb diet and aiming to reduce your carb intake, opting for real crab would be the better choice.
