Well I made mine. It is very good. I made a very small one 2 chayote’s but didn’t know how to make the crumb topping, then I let it get too dark. I put raisins and pecans in mine. It was still good but next time I’ll follow your ingreds for topping. Do you know if this freezes well ?

I think this may be part of my holiday meal plan. I would prefer "apple" cobbler or a pumpkin pie. The way you cut the zucchini is brilliant. We eat with our eyes as much as our taste and I think the shape of the "fruit" will add to the idea of an apple cobbler. With all the new varieties of apples out now, people might just think its a type of apple that they aren't used to eating. LOL

Good morning folks, I made this and the zucchini was spot on but I found the topping too sweet for me so next time I will not add any as I like the flavor of browned almond flour. My neighbor loved it, for him I added regular vanilla ice cream, he's not on Keto. Today I am making it with sugar free strawberry freezer jam that I made this summer. I omitted the spices as I know the cooked zucchini will take on the flavor of the strawberries. Thanks for all your great recipes.

For the most part I have not been having cravings or missing foods I used to eat. But I have always had a particular love for apple desserts so I am starting to think about apple cobblers and pies. i am thinkng of maybe trying your recipe, but try using jicama. It would take a lot longer to cook jicama, but I think I could get it to the right texture. For me, jicama kind of tastes like a cross between an apple and a potato. With the right seasoning, I think it would be very close to an apple. Your recipe is a great inspiration for that idea. Though CJ did convince me that the zucchini will work great. so if jicama doesn't work out I'll try zucchini. (i really want to find something before thanksgiving) I have never heard of that vanilla bean powder. That is interesting. I'll look for it.

I think I liked it better with zucchini. The chayote was very tasty, but more firm. If you prefer your apple desserts with more solid “apples” it’s a good choice. I like softer “apples”, so I prefer the zucchini myself🥰

The reason I ask is because I made a very exciting discovery last week!!! If you add about 1/2 tsp xanthan gum to the crumble mixture, it will bake up really crunchy and not get soggy the next day! I used Chayote to make mine adding raisins and pecans but I didn’t do great on my topping. It got too dark. But it tastes ok
