I just made this cake and it was fabulously delicious! I added crushed pecans before baking which added lots of texture. In addition, I tweaked the frosting by adding a squirt of lime juice and a splash of vanilla extract. Soooo yummy! Thank you for a wonderful cake! BTW, hubby said this is now his fav! Made it yesterday before breakfast. Subbed almond flour for pecan flour and made it in my Ninja tabletop grill, had to knock down the temperature after the first 10 min to 320 (due to heat distribution in the air fryer it bakes way faster than in an oven). For sweetener, I used a mix of allulose and erythritol with monk fruit. Turned out absolutely delicious! And I am quite a fan of the recipe's simplicity and speed. Definitely incorporating it into my arsenal of go-to recipes, thank you!

I would also like to say I LOVE how you explain the why behind how you do certain things you don’t just tell is *what* to do but WHY. Like how you said you weren’t really using much sweetener in the icing since you were going more for some tang from the cream cheese and the cake already had the sweetness. ❤

Sarah you rock!!! I have been trying so many Keto recipies. They all claim that no one can tell they are Keto. They are mistaken. Your recipies really are delicious. Thank you for making Keto not a diet, but a reasonable lifestyle. My health issues are dramatically better and I feel like I can sustain this eating plan.
