This keto friendly muffin is rich in fiber and it is gluten and nut free. The combination of oat fiber, whey protein and vanilla and sweetener create a strong vanilla honey flavour except it has no honey. Simple and easy to bake. Hope you will like it too.

INGREDIENTS
Dry
• 60g oat fiber
• 5g unsweetened whey protein isolate
• 3g baking powder
• 35g allulose sweetener
Wet
• 3 whole large eggs
• 90g Greek yogurt
• 30ml heavy cream
• 1 tbsp vanilla extract
Topping
• sugar-free white chocolate chip
METHOD
1. Preheat oven to 180°C (356 °F).
2. In a mixing bowl, mix all dry ingredients together.
3. In another mixing bowl, add in eggs and beat with mixer.
4. Add in the rest of wet ingredients and mix till combined.
5. Pour the batter into muffin mould.
6. Bake for 25 to 30 mins or until skewer comes out clean.
