So glad you are doing this with coconut flour! I tried some of the recipes with fiber on a couple other sites but they don't use coconut flour. I like your coconut flour recipes.

Janet, I doubled the batch and made these last night. They were GREAT. So soft, such a lovely texture. My husband told me they were too bland for him, so next time I make them, I'll need to up the flavor profile a bit. I'm not a great cook and am not sure how to accomplish this without ruining them. Any ideas. For me, I just put my marionberry jelly on them and was quite happy. Any advise is welcomed. Thanks again for this recipe. A perfect texture indeed!

I am so glad this turned out to your liking. If I want extra flavor I like to add garlic powder or dry Italian seasoning then top them with parmesan cheese before I bake them. Another alternative is you can add a tiny bit of sweetener with a little bit of ground cinnamon to the dough. The possibilities are endless with flavors.

@@JanetsDeliciousLowCarbKitchen Made them today and my only deviation was to add a small spoonful of stevia granulated to the dry ingredients. They look beautiful. I've been using bamboo fiber for some time, but somehow these tasted bitter. I put honey on one and it was okay. I have oat fiber; I think I'll try it with that and see if it's my brand of bamboo fiber that is messing it up. I have Zimmermann's. If it's the bamboo fiber that's causing the bitter taste then it sure has a way of skipping some recipes. I did use aluminum free baking powder. I want to figure out what I have wrong because it sure has a great texture and is so pretty! Thank you!

@@AccioPadfoot12 yes it can be the brand of bamboo fiber that is causing the bitter taste. I only use Modern Mountain and their's has a nice taste and texture

@@JanetsDeliciousLowCarbKitchen most people say the same of Zimmermann, and this is the first time I've noticed it, and I'm midway through my third bag. So I'm thinking it's just the combination with something. Maybe the yeast as I don't typically use that. I'll keep trying!

@@JanetsDeliciousLowCarbKitchen I tried again. I didn't really think it was the bamboo since I make rolls out of all bamboo and they're good. But to test it, I tried oat fiber for one batch and a blend of lupin/bamboo/egg white protein powder for another.(mostly bamboo) Again they are absolutely gorgeous biscuits! The oat has a slightly different taste but still has that (for lack of a better word, 'bitter') taste to it, although it's not as strong. The flour blend is better, but it's still not a flavor I am happy with. So I'm still not sure which of my ingredients isn't behaving like yours yet. I was down to the end of my Greek yogurt, and although it seemed fine, I need to rule that out by using fresh. Definitely going to continue to play with this as they're so beautiful and easy to make! For now I shall go have a slice of your pound cake, which is perfect and lovely! Mmmm....I think I'll toast a slice.

As a general rule you cannot replace coconut flour with almond flour. Coconut flour is much more absorbent and requires extra binding.

The dough to this is very sticky. Density sometimes can vary depending on brand. I would suggest if you think it is too sticky add very small amounts of bamboo fiber. Just don't use too much. The wet sticky texture is what creates an airy biscuit

Any high fiber flour should work. I haven't tried anything besides oat or bamboo fiber so I really can't say for sure.

No oat fiber is not the same as oat bran. Oat fiber is low carb and keto oat bran is not.

@@JenFine223 the bamboo or oat fiber is the main flour for bulk in this recipe so it will not turn out if you leave it out. You can try using coconut flour or lupin flour but only use 1/3 to 1/2 cup of coconut flour if you try it. No guarantee it will work but you can try. If you try it and it works let me know.
