I love having frozen spinach on hand for those nights where I want a quick, easy, and tasty side dish to go with what I’m making. Since I’ve been trying to focus on mainly easy recipes, I thought creamed spinach was a perfect addition to that list. It’s rich, it’s savory, and it has a delicious thick and creamy texture.
As a kid, I never really liked the stuff - I mean, who liked spinach back then anyway? I thought it was disgusting when my parents made it for themselves, but over time I really grew to enjoy the leafy green. In fact, I eat it almost every day - from salads, to stuffing, to side dishes like this.

My entire family absolutely loves this recipe. We use it as a base for cream soups as well. Just replace the spinach with some chicken, add some cream and chicken stock and you've got the best darn cream of chicken soup you will ever taste.

*PERFECT!* All of the "easy creamed spinach" recipes I find aren't easy. I'm not a cook, so I don't feel like grinding nutmeg, chopping chalets and making my own cream sauce. I figured it could be made this way. Very easy, thank you.

@@RuledMe I do have a question. It is said that sugar knocks you out of ketosis. I'm confused about food labels. I understand the subtraction of dietary fiber from total carbs to get net carbs. I understand that it must be under twenty grams which I have been doing. I don't understand how to calculate the total sugars underneath the carb lables. We are not supposed to have sugar, but at the same time it would still be under 20 carbs. If I'm paying attention to serving size and decide that I would still be under my twenty, would the sugar still knock me out of ketosis? I'm hung up on this. I don't understand the added sugar on the nutrition facts under the carbs part. Thank you

Everyone is different. I can have more sugar than my wife and still remain in ketosis. That said, ketosis is an all or nothing game. You're either in it, or you're not. I wouldn't risk knocking yourself out of ketosis. I know for me, it's a lot of work, so I don't want to chance it. It can take weeks to get back into full ketosis, so I try to choose when I break my diet very carefully. I try to take in as few carbs as possible, eat a LOT of salad, and a good bit of fats (nuts, avocado, etc.) Moderate protein, usually chicken cuz it's fast, and goes with just about anything.

tried this with fresh organic baby spinach from trader joe's (didn't have frozen) and Philadelphia cream cheese, knudsen sour cream, private selection parmesan cheese (from Ralph's) and of course same spices... my calorie and carb count came out higher than what's on your recipe. was bummed about that but still delicious

I believe so! If you only have fresh spinach then cook it until it's wilted and squeeze all the water out. (Will want to chop it up a little too.)

Yes but the major issue with spinach is it's a bad source for iodine. Popeye was wrong. It contains something (cannot recall what) that prevents absorption of iodine. :(

Careful with parmesan cheese. If you google it it's full of sawdust as a filler.

Cellulose is also found in fruits and vegetables. It's used in shredded cheese to prevent clumping. You can avoid it, if you wish to, by grating your own cheese. Most pre-shredded cheeses have something added to keep it from clumping.

I'm not sure how it would do in a pot if you were to make a huge amount - I haven't tried it before. It may need extra cook time so that the spinach wilts and the moisture steams off enough.

No, the spinach comes frozen. So you have to defrost it and get the excess water out. :)

What we mean is the blocks of spinach you can buy from the freezer aisle. If you need to use fresh spinach then just chop it up a little and cook it all down in the pan first.

It shouldn't. Cooking can increase the absorption of many nutrients, but it also can reduce others. Usually you won't 'kill' nutrients by cooking, though, the values just change.

Since heavy cream is Keto friendly, why not just make it the old-fashioned way by adding heavy cream, nutmeg, and salt and pepper to taste? Seems a lot simpler, faster, and just as good.
